Candy Ice Cream

Reviewed: Jul. 19, 2006
This is wonderful ice cream and super easy (a big plus in my book). I used this recipe for an ice cream social where, like another contributor, I added chunks of York peppermint patties instead of candy coated chocolate. It turned out great, the ice cream had a hint of peppermint flavor with the bonus of candy chunks. I also tried with crushed Butterfingers and it was fabulous. I think that this is a great base ice cream with endless possibilities. Please note that the recipe says the prep time is 3 hours and 5 minutes...using my ice cream freezer there was 5 minutes of prep (if even that) and 45 minutes of freezing...so it is quick, too. This is definately a keeper.

Lemonade Pork Chops

Reviewed: Jan. 27, 2006
These were wonderful. The flavor was very unique, yet very familiar...hard to describe. You might think that the chops would have a strong lemon flavor because of the lemonade, but that is not the case. I followed the ingredients list with no alterations, however instead of broiling I grilled the pork chops. They turned out fabulous. I will definately be sharing this one.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Jul. 2, 2004
I thought this was an outstanding recipe. It was beautiful to serve and tasty to eat. I did not use the raspberries in the recipe because several of my friends do not care for them. Even without the raspberries it was delicious (and less costly). I substituted Gala apples for the Red Delicious, I find that there is a huge difference in quality of taste between the two types. When making the tortilla chips, instead of sprinkling the cinnamon-sugar mixture on, I placed the mixture in a Ziploc bag and coated the tortillas that way (I believe I used 2 cups of sugar and 4 teaspoons of cinnamon). I also cut down on the fat content by brushing the tortillas with water instead of using the cooking oil. They turned out great, lots of cinnamon-sugar coating and very crunchy (great for dipping). I will absolutely make this again. It is one of the tastiest dishes I have made in a long time. Thanks so much for contributing this addition to my recipe book.

Simply Parmesan Chicken

Reviewed: Jun. 14, 2004
I thought this recipe was extremely easy to make with an exceptional outcome. It looked like a fancy cook made it instead of me. I did make a few changes, not in the basic recipe, but added a spoonful of spaghetti sauce and mozzarella cheese to the top of the chicken pieces, placed them back in the oven to melt the cheese. They turned out great!!! I served it with salad and a side of buttered/garlic noodles...and it is now the meal I take to friends. Very good.

Spicy Rapid Roast Chicken

Reviewed: May 28, 2004
This was an okay recipe. My family thought the recipe was a little bland. I even rubbed the spices under the skin of the chicken and let sit in the refrigerator for 4+ hours before baking...still thought the flavor was lacking. I will try this recipe again but will let marinate in spices overnight.

Pancakes I

Reviewed: May 26, 2004
I am not a big pancake fan, I make them for the kids...but I thought this recipe was very good. It was easy and tasted great, the only downfall is that they were a little on the flat side, but I would rather have a flat pancake than one that tastes like baking powder.***An addition to my original review...I tried the pancake recipe again this morning and they were not as flat as the first time I tried the recipe. I really beat the egg/milk/oil mixture and after I blended it with the flour mixture I let it sit for 5 minutes. The pancakes turned out great, not flat at all.

Cream Peas

Reviewed: May 26, 2004
I am a huge fan of peas and cream sauce and have relied on the frozen food kind (which is difficult to find in my area)...so I was thrilled when I found this recipe, gave it a try and was delighted in how good it was. I followed the recipe with no additions or subtractions and was treated to an easy and delicious dish. A keeper in my book. Thanks.

Good Old Fashioned Pancakes

Reviewed: Sep. 28, 2003
This was not my best recipe experience. I found that the batter was too thick and I needed to add additional milk (maybe using an extra large egg would have helped too). I also started out with my griddle at 350^ and that was too hot (I thought), the batter was so thick that it was cooking before it would spread...I then turned the griddle to 300^ and with thinning the batter had better luck. When I initially read the recipe I thought it called for an awful lot of baking powder and I was correct once we tried the pancakes, there was a distinctive baking powder taste (Yuck)! If I try this recipe again I will definately cut back the baking powder (maybe 2 1/2-3 tsp.), yes they may not be as fluffy, but at least we won't have that after-taste. Neither my husband or my daughter (who loves pancakes) could finish their pancakes. Rated it 2 stars because I had all the ingredients in the cupboard and I think the recipe could be modified with success.

Brisket with BBQ Sauce

Reviewed: Sep. 15, 2003
I found this recipe to be great. It is time consuming but easy and very tasty. I had never made brisket before, I guess a bit intimidated by it, but since finding this recipe it has become a monthly meal. We do like a bit spicier BBQ sauce so I add red pepper flakes to the recipe, otherwise I make no changes, it is good without the tweaking.

Taco Pie

Reviewed: May 24, 2003
My family really enjoyed this recipe, from my 1 year old to my hubby. It was easy and delicious. A bonus is that I almost always have the ingredients on hand, so it is sure to be a quick dinner solution on a busy night. From start to finish it took less than 30 minutes to have the meal on the table, that is a major plus. The only suggestion that I would make is (and I should have been smart enough to figure it out)...spray the bottom of your pan with a vegetable spray. I used a glass 9 x 13 pan and thought that the crescent rolls would be buttery enough that they wouldn't stick...wrong. I garnished with the traditional taco toppings. This is a nice family recipe that was easy and enjoyed.

Chicken Cordon Bleu I

Reviewed: May 1, 2003
This was a delicious recipe which turned out to be easy and quick to make (double bonus). My whole family enjoyed this meal. I used leftover ham from Easter dinner and also followed other reviewers suggestions to dip in egg then into the bread crumbs. I have already passed this recipe onto friends. Am wondering if they would freeze well...I am in a Freezer Cooking Exchange and I think this would be a big hit.

French Toast Waffles

Reviewed: Mar. 29, 2003
I was a virgin waffle maker...I had never made homemade waffles before, but due to the new waffle iron I received for my b-day I had to give it a try. I chose this recipe for my first run and I must say that these waffles were ABSOLUTELY WONDERFUL. They were easy to make (my 3 year old helped) and they were delicious. I followed the advice of another reviewer and doubled the batch, I also added additional vanilla and cinnamon (just a dash). I froze the leftovers successfully. Both my husband and I agreed that they were some of the best waffles we have every had (and both kids gobbled them up, which is rare). Take it from me...someone who never made waffles before, these waffles turned out perfectly. Will definately make again, it is a new favorite. Five stars for preparation and 5 stars for taste.

Sue's Hot Fudge Sauce

Reviewed: Jan. 6, 2003
This recipe is wonderful, the only thing missing was a straw. I do not have a blender but was able to use my mixer with good results. I made this to give away at Christmas and everyone who was LUCKY enough to get a jar of this great sauce, loves it. So easy, so good. This recipe is a keeper.

Bar-B-Que Sauce

Reviewed: Jan. 6, 2003
This recipe is to die for...it is sooo good. I did modify it a bit by adding a few dashes of liquid smoke and red pepper flakes. It was such a good recipe that I made it to give away at Christmas. I found that by quadrupling (by 4) that I was able to make about 2 jars (12-ounce) of sauce. It also makes a great dip for chips. Thanks for a great recipe. Definately has been added to my favorites.

Busy Day Chicken

Reviewed: Dec. 4, 2002
I rate this chicken recipe with 5 stars for ease but a 1 on flavor, very bland. I have tried this recipe 3 times now each time using different brands and flavors of BBQ sauce (the latest being spicy hot), still to no avail. There just wasn't any flavor to the chicken. When I told my husband I wouldn't be trying again he said, "I am okay with that." Not the chicken recipe for us.

Baked Potato Soup I

Reviewed: Oct. 26, 2002
This soup is SO GOOD and relatively easy to make. It took a long time for me to prepare because I was so paranoid about scorching the bottom that I used lower heat to bring to a boil. Like another reviewer I used up some whipping cream and half-and-half that I had and then used milk for the remaining amount, it turned out great. Very creamy! I did find that I needed to add additional salt and pepper to suit our tastes, I also added paprika and in the future I may use garlic salt/powder. When I served the soup I garnished with shredded cheddar cheese. This recipe will definately be added to our family favorites.

Amusement Park Cornbread

Reviewed: Oct. 17, 2002
This is by far the best cornbread I have ever made (or tasted). I do not have a skillet so I used an 8 x 8-inch square pan. I needed to extend the baking time a bit (about 10 minutes...just kept a good eye on it) but it still turned out great. If you are looking for a very good cornbread recipe...you don't have to go any farther. This one is sure to become a family favorite.

Basic Ham and Bean Soup

Reviewed: Oct. 17, 2002
I am not a big ham & bean soup person, but my husband absolutely loved it...said it was the best he's ever had (also received rave reviews from my father). I included some of the suggestions from other reviewers and used vegetable stock (4 cups stock/4 cups water) and omitted the salt. May try next time with a variety of beans. I, too, followed the advice of other reviewers and added more celery and carrots.

Carne Asada Marinade

I did not care for this marinade, not even sure why...too lemony, too much olive oil???? I even tried to doctor it up with some other herbs and spices...to no avail.
