This was very good! Before I became a vegetarian, a local restaurant served a blackened tuna melt that was awesome! So, I tried to recreate this with the Mock Tuna Salad and it turned out great! I made the recipe as directed, which tasted good as is, and then mixed in some shredded soy mozzarella. I then spread it on one slice of tomato herb bread, sprinkled the mixture with cajun seasonings, covered it with soy cheddar, topped it with a another slice of bread and baked it in the oven. It was awesome! I could not keep my non-vegetarian husband away from them! Thanks for a great, keeper recipe!
