Heavenly Pink Salad

I had my 6 year old son help me make this for dinner party one night. Very easy to make and so tasty!! Everyone loved it except for two people who don't like the texture of coconut. They did like the taste, however. We made it exactly as the recipe called for. The only thing I would change is maybe reserve some without coconut since that is the only negative I heard. Thanks for a great recipe!

Broccoli and Cauliflower Casserole

This was wonderful! I took a shortcut and used a bag of frozen California blend vegetables but followed the rest of the directions as is. Everyone at my work loved it and I ended up having to bring several copies of the recipe to work the next day!

Happy Birthday Cake

I was somewhat disappointed with this recipe after seeing all of the rave reviews. I decorate cakes for a side job and I had a customer who wanted a really good homemade yellow cake for her husband's birthday. I don't get a request for a yellow cake very often so I went looking for a recipe and found this one. I made one for me to try at the same time I made the one to decorate. I did not overbake the cake, followed the directions as is and it came out dry, heavy and very crumbly. The flavor was fair but the texture was awful. I ended up brushing the customer's cake with a vanilla simple syrup and coating it with a glaze before icing it in hopes it would taste better and hold up better. I was hoping for a fluffy, tasty cake but this was not it. I will not make this again.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

I am not a frozen green bean fan but these were awesome!! I about ate the whole pan by myself. Even my 6 year old who thinks green beans are his worst enemy and having to eat them is a fate worse than death said that they "were pretty good". I made the recipe as is and will definitely make them again. Probably tonight :) I think it is very important to use extra virgin olive oil. I think the other olive oils would be too heavy.

Golden Yam Brownies

My 6 year old son's kindergarten class was working on the letter Y so he had to make something with yams, let everyone in his family try and then write a report on who liked it and who didn't. He picked this recipe. Awesome choice!! These were to die for!! We followed the recipe exactly except we added a little vanilla to the glaze. They were so moist. They were more the consistency of coffee cake than brownies but that does not take away from the great taste. My husband, the world's biggest vegetable hater, even loved them and said that, if I could make vegetables in this form all the time, he would love it! Asparagus brownies??? I'm not so sure. Yam brownies? DEFINITELY!! Thanks for the great recipe!

Sour Cream Sugar Cookies IV

I'm sorry but I wasn't very impressed with these cookies. I followed the directions completely but the dough smelled like Play-doh and the baked cookies had a bland taste and weird texture. They weren't like any sugar cookie I had ever tried. I do have to give them three stars because they definitely held their shape during baking and were easy to decorate.

Hot Tomato Grits

This was awesome!! I took some to work and even the grit-haters loved it! Being a vegetarian, I changed the bacon to veggie bacon and the chicken broth to vegetable broth and it was still great. I used half sharp cheddar and half mild cheddar for the cheese. Tomatoes aren't in season now so I used a can of drained, diced tomatoes with peppers and onions. Great recipe!

Hot Fudge Ice Cream Bar Dessert

This is awesome! I made it for a church group and it was rated a 14 out of a 10! I followed the suggestions to put the chocolate layer on before the whipped topping and that worked great. To make the top of the dessert look a little more fancy, I topped the whipped topping with crushed peanuts and maraschino cherry halves and then drizzled some chocolate syrup over that. Great recipe and will make again!

Hot Mexican Spinach Dip

This was awesome!! I made it to bring to a party this weekend and it disappeared instantly and I have had numerous requests for the recipe. I think part of the problem others had with the consistency was that when you thaw and drain frozen spinach, you need to squeeze the spinach thoroughly between several paper towels to get the water out. I will be using this recipe again and again! Thanks!!

Mock Tuna Salad

This was very good! Before I became a vegetarian, a local restaurant served a blackened tuna melt that was awesome! So, I tried to recreate this with the Mock Tuna Salad and it turned out great! I made the recipe as directed, which tasted good as is, and then mixed in some shredded soy mozzarella. I then spread it on one slice of tomato herb bread, sprinkled the mixture with cajun seasonings, covered it with soy cheddar, topped it with a another slice of bread and baked it in the oven. It was awesome! I could not keep my non-vegetarian husband away from them! Thanks for a great, keeper recipe!

This is my new favorite baked beans recipe!! As a vegetarian, I use veggie bacon but everything else I follow according to the recipe. It's that good that it doesn't need alterations!! Everyone in my family loves it and it doesn't last long.

Suki's Spinach and Feta Pasta

This was awesome!! As a vegetarian, with a non-vegetarian husband, it is difficult to find meals that fit my lifestyle and satisfy him. This one did! I was concerned that the flavor may be bland when looking at the recipe but the flavors, once cooked together, mingled perfectly. I added a little bit of crushed red pepper for zip and 1 cup more spinach and it was great! This is definitely a keeper!!

Grandma's Graham Cracker Pudding

A friend's mother used to make this years ago but wouldn't share the recipe. I have looked since then for the recipe and never found one exactly like it until now! This is it and it is wonderful! The first time I made it I didn't let the pudding thicken enough but it still tasted great!!
