Saltine Toffee Cookies

To keep things simple: way too greasy, way too sweet. Though easy to make, not worth my time. I was looking for some new Christmas cookies to make in the future, but this one was far from making the cut.

Eggnog Pancakes

I made these for Christmas morning, and I think they've become a new tradition! The batter wasn't runny enough so I needed to adjust a bit there, but other than that these pancakes are great. The eggnog flavor is there, but it's not overwhelming. It's just enough to make it festive! My husband dislikes eggnog, but its flavor was light enough that he could still enjoy these pancakes too!

Eggnog Quick Bread

This bread would probably earn itself a full 5 stars next time, but for now it just doesn't quite cut it. I followed the recipe exactly, and the imitation rum ruins it. I'm not sure how real rum would change baking consistencies and such, but I think it's worth figuring it out. The imitation stuff leaves such an awful taste in your mouth that you no longer want to eat anymore!! It's truly horrible! If not for that, I think I would love this. The consistency is nice, and it was moist. Just one bump in the road to figure out.

Best Bread Pudding with Vanilla Sauce

I definitely want to give this recipe another try, but with WAY less sugar. I followed the recipe exactly and it was incredibly sweet. Even for someone like me that has such a sweet tooth! To me, bread pudding should be slightly sweet and comforting. Not so sweet that it leaves you nauseous! I do, however, like the addition of a sauce. That's something I haven't really seen before, and made this bread pudding a bit special. If I can figure out the proper sweetness, I think this could end up being a winter tradition.

Slow-Cooker Lasagna

This recipe is a life saver. A quick and simple lasagna that I can do in a slow-cooker!!! The only change I made was to use whole wheat lasagna noodles. Everything else was to the recipe. The only thing I noticed is that the lasagna has to cool a fair amount before serving. If right out of the slow-cooker, it tastes bland. Once it cools enough, the flavors seem to crop up, and it's actually quite salty! I wouldn't say it's the best lasagna I've ever had. But for the easiness of it? I'd give it 10 stars if I could.

Spring Biscotti

I was very disappointed with these. Compared to the cranberry-orange biscotti I'd made once from a cookbook I own, I felt that these were seriously lacking in flavor. And I was so excited to see what the white chocolate would do, and was disappointed to find I couldn't really taste it. It was frustrating to be adding more sugar and calories to the biscotti without at least getting a lot of flavor in return. If it's good biscotti, I can't stop eating it. This, however, I had no problem stopping. Surprisingly though, my neighbors loved it and raved about it. So perhaps it's personal preference, or my taste buds are just off! Perhaps I'll give them another try since if nothing else, I can make my neighbors smile again!

Fluffy Pancakes

These pancakes have a lot of flavor, and I love the "trick" of putting vinegar into the milk to curdle it. I make pancakes for my family every Sunday, and I'm currently experimenting with using 1/2 white flour and 1/2 wheat. I've found that the batter becomes too thick and no longer spreads properly, so I've started pouring in a bit of extra milk into the batter at the end to get it back to the right consistency. Seems to do the trick. I do wish it was a tiny bit sweeter, so perhaps I'll add another 1/2 T of sugar or something and see what happens.

Easter Breakfast Casserole

Considering the various ingredients this takes to make, I was not at all impressed with the results. The only real flavor I got out of this was..."salty!" I had hoped this would become our Easter morning tradition, but it certainly won't be. And the time it took to make was totally not worth it in my opinion!

Unbelievably Good Fruit Dip

This was easy to make, and I had no issues with clumps like some people. The dip definitely grew on me as I ate it, but to be honest when I first tried it I didn't like it. You could taste the cream cheese too much, and I had hoped this would be more like a sweet fruit dip I'd had at a party once. It tasted better once I had it with fruit, and is probably healthier than the one I had tried, so I'll probably make this again. I will look into making a few changes though. I wonder how pineapple juice would mix? I need something to make it a tad less cream-cheesey.

Roasted Asparagus with Parmesan

There isn't much to say except: quick, easy, tasty! I followed the recipe exactly, and the result was great! My only complaint would be that it's a tad on the greasy side for me. But dabbing them with paper towels before serving takes care of a lot of that!

Miso Salmon

Due to a slight miscalculation, I ended up making the marinade, and then brushing it on the salmon in order to grill it. We grilled a 1.5 lb salmon on medium for about 25-30 mins, brushing on more marinade every 5 mins or so. The result was incredible. I only wish I had been able to have more sauce (maybe next time)! I paired this with a home made mango salsa, and it was suddenly like I was at a restaurant! Absolutely perfect and delicious. If you do choose to grill it though, definitely lessen the recipe....I had so much marinade left over! What a waste!

Miller's Marinara

I'm willing to give this another try someday, but what a disaster! Followed the recipe exactly, and all I ended up with was burnt sauce. I had the crockpot on the right setting and for the correct amount of time. But about an hour before the timer was to go off, I started smelling something burning. And sure enough, the outer edges of the sauce were black. And the bits I could salvage just tasted heavy in seasoning. No lightness, no real flavor or depth. Just an overpowering taste of the spices. Other people rate this sauce high so it must have been my mistake somewhere, but the result I got was awful. What a disappointment.

Salisbury Steak

My husband is actually the one who made this for me, and it was incredibly delicious. I couldn't stop eating it! He knows nothing of cooking, so the fact that he could make a delicious dish proves that this dish is easy to do and simple to follow. He followed the recipe exactly, and my only criticism would be that there wasn't enough! Terrific dinner, and great with mashed potatoes and broccoli.

Mango Salsa

I made this to go with some miso salmon, and it was just delicious. Sweetness from the mango, tang from the pineapple...yum! I was too pressed for time to add the ginger, and being sensitive on spicy things I omitted the pepper flakes altogether. But there was still so much flavor, and still a bit of a kick to it to satisfy my sensitive taste buds as well as be mild enough for my 17 month old twins. Hopefully next time I'll manage to actually add the ginger!

Best Big, Fat, Chewy Chocolate Chip Cookie

I have now made this recipe about ten times, and unlike other "big, chewy chocolate chip cookies" recipes I've tried, these turn out the same every time. It's wonderful to have such a reliable recipe. The cookies turn out big and chewy, and every one who's had them loves it. They're always shocked to find out they're homemade! I bake mine for 17 mins to get the edges browned, and I learned the hard way after my first failed attempt that making them the size stated is crucial for the perfect outcome. Unlike what the recipe says, I always yield 10 cookies per batch. To anyone looking for the perfect cookie recipe, look no further!

Oven Fresh Seasoned Potato Wedges

These were awesome!!!!! Turned out perfectly on the first try and they were so delicious! I used 4 potatoes but kept the seasoning amounts the same. The only problem I noticed is that the wedges stick to the cookie sheet something fierce!...and that I couldn't stop eating them all! Definitely try this recipe. It's super easy too!

To Die For Blueberry Muffins

I loved how this recipe was so simple. I always have frozen wild blueberries in my freezer as well as baking staples, so I can make this any time now! I was able to make 9 muffins using the silicone cups. Using frozen wild blueberries, which are smaller, 1 cup made the muffins truly blueberry infused. I love that, but for those that don't, maybe use less than a cup if using wild blueberries like I did. Though I filled each silicone cup ALMOST to the rim (not exactly as the recipe said), two of the muffins still overflowed. I baked it for 25 mins, which seemed just right. Any longer and the bottoms would have burnt. The muffins were moist and delicious! I'll definitely be adding more cinnamon and perhaps a bit less of butter to the topping next time. I would definitely recommend this to others. So easy!

Coconut Pecan Chicken

The flavor from the pecan/coconut was very good. However, I had an incredibly frustrating time with this recipe. I used chicken breasts that I'd sliced into thinner pieces because I knew it'd never cook if I left it as thick as it came. And yet, even with doing that, the chicken just never cooked! The outside began to burn, so I had to lower the heat, and the chicken was still not done....I'm willing to try this recipe again, but not for awhile. I feel drained from this failed attempt. I'll have to figure out exactly what went wrong, and what I plan to do differently before I try this again.

Mom's Favorite Baked Mac and Cheese

This recipe is definitely better than the one I was using before, so for that, thank you. I tend to add a little more onion than the recipe calls for, as well as chopped up mushrooms. I also sprinkle some wheat bread crumbs on top before baking it so that there's some added texture. I cover the pan with foil except for the last 5-10 mins since I prefer the top of the mac and cheese to be soft. I would recommend this recipe to others. It seems pretty fool proof, and it seems there are endless modifications and additions that can be made to match people's tastes.
