Mendocino Chicken Salad

Great chicken salad! I had a Costco chicken and I found a great way to sub the smoked chicken flavor. Mix 2/3 drops of liquid smoke into the mayo and when you combine it with the chicken it will give you the same taste. I also added a handful of blueberries. Delish!

Summer Garden Crustless Quiche

Yummy! A nice quick dinner. I had everything on hand and also added 2 chopped aidells mango Jalepeno sausages. Next time I will add roasted red peppers. Delish!

Sam's Famous Carrot Cake

Simply outstanding! I made this for my husbands birthday party and everyone raved. Used 1 cup whole wheat flour ( I do that with all my baking) 1 cup unbleached flour, omitted the raisins and doubled the recipe to make a party size 12 inch round 2 layer cake. Filled and frosted with cream cheese frosting. So delish! Do NOT pass this one up;)

Strawberry Coffee Cake

Simple, easy and good for when you have strawberries that are about to go bad. Made two over the weekend and they were gone within 30 minutes. Followed recipe verbatim, no need to mess with the ingredients. A new regular treat in our house!

Oven Baked Jambalaya

This was good and the whole family enjoyed it. I halved the recipe and thus cut out some steps, after initial saute, I just threw everything into my Rachael Ray ovenproof pan and let it rip. Also subbed large prawns for pre cooked shrimp, chicken tenderloins for store bought rotisserie and Evergood Pineapple sausage for andouille, which helped control the heat of the dish a bit as I have a 3 year old that doesn't yet appreciate very spicy food that the rest of the family does. I also used the recommended link for the creole spice mix and just eased up on the cayenne and white pepper. An overall winner that I will make again!

Actually Delicious Turkey Burgers

These are very tasty. I did pan fry them in a tiny bit of olive oil because they felt too soft to put on the grill, even after refrigerating the patties for a few hours. Will make again!

Apple Bread

This is a great way to use up apples that are "past due". My tweaks, I subbed 2 cups of the white flour with whole wheat flour and shredded the apples. Added a couple dashes of ground nutmeg and a few drops of almond extract. Also used other reviewers suggestions of subbing half of the sugar with brown sugar and adding a tsp vanilla. Baked in one bunt cake pan for 60 minutes at 300 convect. Came out great!

Dobos Torte

This is good. I had my grandmothers recipe for Dobos and used it for years before I switched to this easier, more streamlined version. I still use my original chocolate buttercream recipe which I have posted here. This also freezes very well if you cut them into slices and separate them with wax paper. Very rich, very delish!

Garlic-Ginger Chicken Wings

Wow! Another delicious recipe from Chef John. Wings came out crispy and I did not need to turn them when I used the roast option in my convection oven. Sauce is thin but coats the battered wings perfectly. Not too hot, but definitely has that Asian Zing! A keeper for sure!

Shredded Chicken Tacos

This is a really nice filling for chicken tacos/burritos/nachos. I did not use adobo seasoning because I didn't have it on hand. I used emmerils essence after googling adobo seasoning and discovering the ingredients were very similar. Also after discovering I had twice as much chicken breast than the recipe called for, I added 2 cups of chicken broth to the tomato sauce mixture and it cooked down nicely and made a rich and flavorful sauce. Also added about a half cup minced onion for flavor. Very tasty. Will definitely put this into my rotation!!
