Cuban Pork Roast I

This was yummy. After having a Cuban Restaurant near our office a few years ago, I was interested in looking for recipes that would remind us of the good flavors.... I used a 2.5LB. pork loin. I made it in the crockpot and because of time constraints and waiting for a few ingredients that needed to be picked up, I started the roast with some chicken broth for the first couple of hours. I poked holes in the roast with a fork. When all the ingredients arrived, I drained out the chicken broth and proceeded per the recipe, except I did add a little bit of high quality vinegar instead of the lemon juice and simply squeezed the juice of half a lime. Yum! I made it with a package of "yellow rice" purchased at the store and used the chicken broth set aside for the rice. I also added a pinch of cumin to the rice. The two dishes blended splendidly! The family had a hard time waiting for it to be ready to eat, it took about 7 1/2 hours in the crockpot. I also made fried pineapple for dessert with ice cream. Note, I used 2.5 lbs pork loin because that's what I had. I didn't reduce other ingredients. Because I used such a lean cut of meat, it was on the dry side.

Buttery Soft Pretzels

Oh boy, these are GREAT! They are really tasty, much like the mall pretzels :) Especially the ones that I brushed on the butter and sprinkled the sea salt. I also made half of them with cinnamon-sugar topping. They were yummy. We'll definitely make these again. Thank you!

Super-Delicious Zuppa Toscana

This soup was easy to make and really tasty. My husband and daughter both liked it. However, don't do what I did - accidentally double the cayenne pepper. Yikes, two days later it was toned down, plus I had to add lemon juiceNext time....perfect!

Easy Valentine Sandwich Cookies

These cookies are great! I have made these for several school valentine parties. I use the two heart cut-outs and fill the sandwich with a generous amount of homemade buttercream frosting (colored pink) They look and taste wonderful! I don't decorate the cookie because the pink buttercream looks nice with the light golden cookie.

Chocolate Cavity Maker Cake

I have to confess, this is the only chocolate cake I've made on this site. Why change? It is the most DELICIOUS bundt cake. My husband has taken this numerous times to a men's fellowship...everybody fawns over it. We've made this cake for several years now. Just be sure to coat the bundt cake well. I always coat well with non-stick spray. It's perfect sprinkled with the confectioner's sugar. Love this cake!

Barbeque Halibut Steaks

We've been using this recipe for several years now. It is THE best marinade/topping for halibut. In fact, it made me a halibut believer - this was no small feat, as I was not a dedicated fish lover. We don't marinate them for a long time, just whip it up and baste the halibut, albeit generously. We only use this recipe on the barbecue. Delicious!!

Coconut Poke Cake

This cake is very rich and most. It actually tasted better on the third day (?) I think that the next time I make this cake, I will reduce the coconut cream, I thought it was a little too rich. I had also added coconut in the cake mix and my husband suggested that I leave it out next time. I would agree. I also will not use the white cake mix with the pudding in the mix. I don't think it was necessary. It is a delicious cake!!! Thanks for sharing.
