I have been cooking since I was about eight years old and love providing delicious and nutritious meals for family and friends. I love a challenge and if a recipe puzzles me as to how it might taste- I am in! lol

Anything that tastes good and that makes my family and friends happy. Biscotti, home-made jams and salsa, ribs, cake, cookies,salads...you name it.
My favorite family cooking traditions
Salad bar night. Baked potato bar. Big buffet type spread for Super Bowl and Academy Awards.
My cooking triumphs
Going to be published in Ladies Home Journal! April 2014 issue will have a story about my dad's sugar cookie recipe that I wrote and submitted. Very excited. Another triumph was planning the cooking for both my boys Eagle Courts- cooked for over 100 people- everything from salads through desserts.
My cooking tragedies
When I first started baking I was about eight or nine. I made peanut butter cookies with a cup of salt! The recipe already called for BROWN sugar, and then it said 1 cup s. So, I figured it was salt. Horrible!

Scalloped Potatoes with Ham and Bacon
I would have given this five stars, but after reading some of the reviewer's suggestions, I used their advice and so the four stars is due to making the changes. I tripled the milk and flour (using heavy cream instead of milk), and reduced the salt and pepper ( just sprinkling some on each layer- so maybe 1 tsp. each in total.) I used Kirkland bacon bits instead of frying up bacon, but other than those adjustments stuck to the original. It had wonderful flavor, creamy and rich with just enough sauce( I can see why people commented about it being dry and needing more liquid, so that is why I tripled it- thanks for the heads up!. The salty, smoky taste of the ham and bacon were a delightful addition to the potatoes and this is high comfort food. I will make this again- very good!

Sweet and Spicy Curry with Chickpeas
I made this last night for dinner but used chicken thighs instead. Delicious! Quick, easy and tremendous flavor. I used one of the other poster's suggestion and used the extra coconut milk in the Jasmine rice that accompanied this dish so well. I not only made it last night, but am making it again tonight- a double batch this time!

Grandma Sophie's Smashed Potato Salad
This is a variation of one my mom has made since I was a kid. We use chopped gherkins and a splash or two of the pickle juice and a squirt of yellow mustard. The best!
