As a rule, I hate frosting. It's always too sweet. This frosting, however, is really light and has just the right sweetness. I think it would also be really good as a fruit dip. My husband was making this for my birthday cake and he got a little enthusiastic with the mixer. He kept on beating it until it collapsed in on itself and turned to butter. He was really disappointed until we decided to put it in the fridge and let it solidify. It became this delicious almond flavored buttery spread that tastes fantastic on cinnamon raisin English muffins or toast. What a happy mistake!
