My favorite family cooking traditions
Christmas breakfasts have become a family tradition that we all look forward to. Each year a different member of the family takes on the task of preparing the meal. There are no rules attached for this one day-it can be a breakfast of desserts or something loaded with fat! It is wonderful to spend time with family and enjoy something nostalgic and special together. I often find myself thinking throughout the year "this would make an awesome Christmas breakfast!"

Ghirardelli(R) Dark Chocolate Truffles
These are absolutely to die for! I couldn't find Ghiradelli chocolate at my grocery store so used President's Choice milk chocolate and salted butter. I rolled the truffles in cocoa powder, icing sugar, coconut and sprinkles. I will make this recipe over and over again!

Best No-Bake Cheesecake
This cheesecake is a good start to something amazing. Instead of graham crumbs, I used oreo cookie crumbs and made the crust according to the directions on the box. I doubled the sugar to 2/3 cup and used 1 tsp. lemon juice and 1 tsp. vanilla. I then added 2 cups of pureed frozen berries (measured frozen) and omitted the cherry pie filling. This cheesecake was light and fluffy and absolutely delicious served slightly thawed. The biggest problem was that it melted as soon as it warmed up! Next time I will try the recipe as is and see what happens.

Cranberry Pistachio Biscotti
I have made this recipe serveral times and it is the best biscotti I have ever made. My colleauges beg me to bring it to work for coffee breaks and pot lucks. I make it true to the recipes, however, do the second baking for a bit longer than suggested just to make sure it is extra crispy. Sometimes I also melt white chocolate baker's chocolate and dip half of the biscotti in white chocolate. Delicious!
