Fabulous Homemade Bread

I accidentally made it with white sugar...not sure if this affected how it tasted. It was good, but it didn't have the fresh homemade baked bread taste I was looking for.

Creamy Roasted Parsnip Soup

I added halibut to this recipe and it turned out amazing. My husband LOVED it but says he will only eat it Oct-Dec. Go figure! I did the following to it: Cooked only 1/2-2/3 of the total veggies in the soup but used actually 5 cups chicken stock, 1-1.5 lb halibut cubed/deboned/skinned (my hubby caught it in Canada). I took the entire spice mixture and put half-2/3 into the simmering veggies as the recipe says to, then the other half I sprinkled over the cubed fish, which I added last to prevent the fish from being too rubbery. DELICIOUS! Serve with buttered/garlic salted bagguette bread toasted in the over.

Creme Brulee II

I only made this once, added the extra yolk and cooked it for 45 minutes like the recipe said. I also added fresh raspberries from our garden into the liquid just before pouring into ramekins. They seemed set when I took them out of the oven, but weren't set when I went to eat one with my hubby for dessert. I don't know if the raspberries extra water content did that, but if I could do it over I would serve the fruit on top instead. My husband and I love creme brulee and have eaten it many times at nice restaurants around Portland...the flavor seemed a little off for us.

Pumpkin Bread IV

I made cupcakes out of this, frosted with cream cheese frosting from another recipe and sprinkled the tops with chopped walnuts. Delicious!! I have a thermometer in my oven, cooked them a dozen at a time, 350 for 25 minutes, set them to cool on a little cooling rack and frosted. So YUMMY!

Sweet and Spicy Sweet Potatoes

I made these potatoes for family in town with high hopes they would be amazing...how disappointing. Won't make them again, the spices smelled good all mixed together, but tasting it all put together wasn't good.

Refried Beans Without the Refry

This is a super easy yummy recipe for home cooked beans. My 2 year old daughter loves beans and rice so I made this for her. The first time I made it with the jalapeno, with chicken base, and it was WAY too salty and spicy for kids. Scratch the chicken base and only add 3 tsp salt for pinto. The second time I made it without the jalapeno and only added 3 tsp salt, no chicken base and also made it with black beans. I had to add about 2 more cups of water for black beans and it turned out perfect! Delicious recipe!

Butternut Squash Soup with a Kick

I live in the PNW, this year my squash harvest came with a surprising butternut (all the sproutlings look the same at the ACE where I buy them so I sometimes get surprised with what I think I am planting!). This recipe is delicious! I used 1 medium and 2 small butternuts, ended up added 1 tsp of salt and had to had 1.5 cans of the chicken broth to cover the squash. I let it simmer down to thicken and just mashed the squash with a potato masher after it had cooked the 30 minutes. So YUMMY! Will be making this with my garden fresh peppers, onions and squash every year. Thank you!!

Smashed Red Potatoes

I agree with previous ratings that say this is pretty much dry potatoes unless you add a lot more butter/seasonings. Good in theory, just not delicious.
