Beef and Bean Chimichangas

I read some of the reviews before trying and took some of the suggestions. I used ground sirloin. I also used enchilda sauce instead of taco sauce. I used black beans and went ahead and mixed them with meat. I also added cheese on top after almost completely baking so that it melted. I also used the Best Spanish Rice recipe from this site. I loved this recipe can't wait to cook it for my hubby.

Basil Pork Chops

LOVED these...I used pork chops that had the bones so my cook time was longer but I still didn't get the burnt coating like some of the other reviews have been. I used olive oil instead of vegetable. I also didn't have chili powder so I substituted cumin, cayenne pepper, and oregano.

Peppered Shrimp Alfredo

This was absolutely delicious. My husband asked me to put this in the rotation. I omitted the cayenne pepper and red bell pepper. So I really I made just Shrimp Alfredo. lol I added spinach too.

Best Spanish Rice

I use this all the time love it. The only thing I do differently is instead of the chicken broth I throw in the Knorr concentrated chicken stock and add water. (I love the Knorr chicken stock use for everything)

World's Best Lasagna

I made lasagna for the first time using this it is absolutely wonderful. I am so glad I read some reviews and didn't omit the fennel seed it is really important. I cooked my sauce in the crockpot. Started it in the morning and let it cook all day. Then put everything together for dinner.

Chicken Monterey

I had to make a few changes for what I had on hand. I used boneless chicken thigh pieces. I didn't dredge them in flour I just browned them in some olive oil and garlic seasoned them with a little salt pepper. Put them in the oven with some colby cheese on top. I then made the sauce following the directions except adding more chicken stock and omitting the wine. I served the sauce over mashed potatoes. It was absolutely wonderful. Will be adding this into my rotation.

Fluffy Biscuits

Followed recipe except I only had butter and used it instead of shortening. These biscuits were perfect and really easy. I think I will make them again today

Mushroom and Spinach Ravioli with Chive Butter Sauce

I made these tonight and they turned out ugly. They were so ugly I quickly formulated a plan b just in case. I put dinner on the table and my boyfriend said ugh what is that? The kids looked at it like I got to eat this? Despite the looks they were absolutely delicious. So very yummy.

Broccoli with Garlic Butter and Cashews

This was delicious. I cut down the butter to 3 tablespoons per other reviewers suggestions and I didn't have cashews so I just left them out. I also added just a tad bit more brown sugar.
