Cauliflower Potato Soup

One of the best soups I've ever made. After reading the review about it being too chunky I simply took half of it out of the pot and used my immersion blender then added it back in. This smoothed it out quite a bit. I also added a clove of garlic because we love garlic in everything. We are veg so I subbed cream of celery soup for the cream of chicken and veggie broth for bouillon. It was delicious. We'll be making a lot of this over the winter. I think you could use any type of potato, not just red.

California Vegetable Bake

Fatteningly delicious. This probably has about a million calories but I could have eaten the whole pan...yum! I added a potato, corn and some zucchini to the veggie mixture.

Vegetarian Black Bean Enchiladas

Delicious! Will definitely make again soon. Hubby thought the cilantro taste was too strong but that's just a personal preference. Will cut it in half next time. We used low fat cream cheese and cut the amount of cheddar in half to cut some calories and I don't think this affected the flavor at all...yum. :)

Butternut Squash Bisque

The only thing I changed was to add a bit of garlic and a cinnamon stick and it was delicious. Everybody loved it. Luckily my grocery store sells the squash already cut up for about $3.00 a pound. Totally worth it to save the time and trouble of cutting it up.

Sopapilla Cheesecake Pie

This is one of our favorite desserts, and so easy to make. I cut the amount of cream cheese and sugar in half. It tastes just as good with fewer calories. Also you can cut the butter by quite a bit and it's still just as yummy! Oh,and also try serving it with Blue Bunny Carmel Praline Crunch ice cream. : )

Caramel Filled Chocolate Cookies

I used Rolo candy and rolled these in red sparkling sugar instead of nuts for a Christmas cookie exchange and they were a huge hit! They were not hard to make at all. Yum!
