Pasta e Fagioli I

This is the hubby's favorite soup; the entire family even my picky one wanted seconds! I stole a few tips...... use diced and/or crushed tomatoes,extra clove garlic, 2 cans chic broth, 4 tsp dried parsley,added 2 stalks of celery and 1 carrot.......could of used more pasta maybe 7 oz also could've used extra beans cooked ditalini pasta separately and served by itself in a bowl then added soup. Hubby said it was a keeper!

BBQ Beer Brat Kabobs

Absolutely delicious! This was my 1st time making kabobs, Husband and guest gave several compliments. The 7 yr old cleaned her plate and my 3 yr old who is hard to get veggies in ate all but 2 bites! Definitely will make again, It made 10 kabobs using 5 brats. I did leave off the onions because we only like well cooked onions might try w/ them next time

Creamy Garlic Mushroom Chicken

Even though my picky 4 yr old didn't like it I thought it was pretty good. I used 1 can cream of mushroom and 1/2 can roasted garlic. Amt was adequate; we put over egg noodles. I substituted canned for frozen corn. Easy and quick!

Normal Chicken

This was pretty good with the added benefit that it's easy! I used 3.5 lbs. of chicken pieces so I doubled the sauce along with 1 cup of brown sugar.I seasoned the meat with onion powder and a garlic pepper blend. I used low sodium soy sauce. Thru in some carrots. Delish! I think if I make it again I will marinate to get the flavor more into the meat instead of the skin, maybe use skinless/boneless.

Cajun Seafood Pasta

Delicious! Huby loved as well and he's not a huge fan of spicy food. I did follow some of the reviews and left out the red pepper flakes and halved the black pepper. I think next time I will also halve the white pepper and maybe put a pinch of flakes because the white pepper overwhelmed it a bit. I also ended up doubling the cream because I'm a novice cook and wasn't paying close enough atention and the sauce srarted bubbling and reduced quite a bit! wa I'm glad I did or I wouldn't have had enough sauce. I used 2 tsp. of italian seasoning because I was out of hind site I should of decreased the salt The seasoning has salt in it so it was a little on the salty side I added a litle milk to compensate. I also used 1# shrimp no scallops and added mushrooms and minced garlic from jar. Served over spinach fetticine, can't wait to try again!

Ravioli Soup

A nice quick and easy soup. I like leftovers so I doubled everything. Next time I will add more water and bouillon.Left out spinach because I didn't have any. I used cheese tortelini instead of ravioli and canned mushrooms. Husband really enjoyed it but said it wouldv'e been better if I had used fresh mushrooms like the recipe called for. I think the broth couldv'e used some additional seasoning but I'm a cooking novice and didn't know what to add, maybe marjoram thyme or chicken seasoning

Easy Slow Cooker Meatballs

My husband and 2 year old loved it; I thought it was pretty good but felt the meatballs could have used more seasoning. It might have been because I used regular bread crumbs but I did add 1 tsp of Italian seasoning. Next time will use the seasoned crumbs or add more seasoning. I baked the meatballs for 15 min. prior to adding to sauce hoping to avoid grease in sauce but really didn't see any drippings,still had greese in sauce. I used a 26 oz. jar of sauce and a 28 oz can of pear tomato strips with basil in puree because thats what I had on hand. I added some garlic and italian seasoning to the sauce. Overall good recipe it was nice to come home from a cold night of trick or treating to!

Awesome Broccoli Casserole

This casserole is AWESOME! I made it for a potluck with a few changes. I used 2 16 oz bags of broccoli, 16 oz. low fat sour cream, 1/4 cup regular sour cream, 3 cups of cheese(I used a 4 cheese mexican blend because thats what I had on hand)The majority of this was mixed in with a small amount sprinkled on top. I had a large bag of Pepperidge farm stuffing that I used 8-9 oz of and threw in a little extra butter.I am not a huge fan of onion so I followed other reviewers advice and only used 1/2 an onion and chopped it real fine with my electrical chopper and it was the perfect amount. I also cooked the onion, corn and broccoli for 5 the microwave before combining. I put it in a 9x13 pan, covered with aluminum foil and baked for 30 min. I then took off the foil and baked an additional 10-15 min. to make the top crispy. I bet this would be good as a meal with some chopped chicken or turkey mixed in.
