I used to be a nurse but now I am a stay at home mom to 3 girls and a proud Navy wife.
My favorite things to cook
I love baking anything and everything. I'm trying to learn to cook healthier and am trying to cook new types of food. The Navy has sent us to VA so I'm trying to learn southern.
My favorite family cooking traditions
I'm Norwegian and we bake lots of krumkake, rosettes, and lefse around the holidays. My girls and I do a HUGE Christmas cookie bake every year! Also, on birthdays, everyone picks their favorite cake to have.
My cooking triumphs
Cream puffs, a zucchini bundt cake, chicken enchiladas, lasagna.
My cooking tragedies
I made a cake for my daughter's 1st birthday that was baked in 2 half circle pans, so it was a sphere when put together. It was a circus ball. I covered it in fondant and painstakingly made tiny marzipan circus animals.. including an elephant with a ball on it's trunk for the top. It looked perfect... and was easily the most disgusting cake I've ever tasted. I couldn't even eat it. Awful.

Coconut Cream Pie VIII
This was sooo good!! My daughter proclaimed it the best pie ever! I mixed 1 1/2 cups of the coconut into custard, also the extra egg yolk with the eggs. Also, I made a graham cracker crust. I didn't think I even liked coconut cream pie, but it was so good we are all fighting over the last piece! Thank you so much for this yummy recipe!

Artichoke & Spinach Dip Restaurant Style
This recipe was great!! It did taste just like the restaurant version. My usual recipe ends up greasy from all the cheese, but this was nice and creamy and not greasy at all. It was very rich, but perfect for a party where it can be shared by many. I used Classico Roasted Garlic Alfredo, and only roasted 2 cloves of garlic. I also used the whole block of cream cheese, and eyeballed cheeses, prob used a little more than called for. So good! You have to try it!

Sarah's Applesauce
Great recipe, but WAY too sweet. I cut the sugar in half and used just 2 shakes of cinnamon and it was much better. I used half pears and half braeburns the first time and all McIntosh the second time.
