Mexican Casserole
Love this recipe! I added onions and two diced jalapenos (with seeds) to the mixture while it was cooking in the pan with the meat to give it more flavor. I also didn't drain the tomatoes before putting them in the mixture in order to keep the moisture. I put cheese on top of the first layer of tortilla. Served it with sour cream on the side. It turned out good, but needed more flavor. I think I'll add more chili powder and maybe some other spices next time. It's definitely on the top of my list!
