Grilled Vegetable Salad

I loved this recipe and have made it several times. Yes, grilled vegetables stand on their own and don't need a dressing, but if you are grilling for a crowd, sometimes there isn't room on the grill for everything. You can make this dish ahead of time, and then save the grill for the meat. I think the salad is even better the next day, after the vegetables have soaked up some of the dressing. I've also added fusilli pasta to it, and served it on a bed of arugula.

Sausage Baked Ziti

This is a delicious, reliable, and versatile dish that I've turned to again and again. Use the best possible ricotta you can find... it really makes a difference. Also, I remove the casings from the sausage and crumble the meat before I heat it.

Simple Pasta Salad

This is a simple, versatile salad that I've made twice in the past week. The first time I followed the instructions, and the result was a summery flavorful Italian pasta dish. The second time I skipped the cucumber and added broccoli, chopped red pepper, and shredded carrots. It was equally delicious. Also used bowtie pasta, which worked really well.

Bananas 'N' Cream Bundt Cake

This was astoundingly easy, and the result was terrific. I made it twice in one week. The first time I skipped the nuts and added blueberries instead. The second time I added chocolate chips. Both versions were a huge hit. This is definitely a keeper.

Flan de Coco (Coconut Flan)

I took the advice of some of the other readers, and used coconut milk instead of evaporated milk, skipped adding the half cup of sugar, and used heavy cream instead of milk. The result was fantastic. I brought it to a Cuban themed dinner party, and everyone loved it and went back for seconds.

Spinach Lasagna II

This is a super easy and delicious lasagna. I took other reviewers' advice and used a jar of tomato sauce in place of the packaged sauce and water. I still used the can of paste, though, to thicken the sauce slightly. Next time I will add some more mozzarella, and perhaps another layer of pasta on top so it looks more like the photo. I'll definitely make this again, and look forward to experimenting with different vegetables.

Tangy Slow Cooker Pork Roast

I followed this version of the recipe to the last ingredient, and I can honestly say it was the best thing I've ever made in my slow cooker. The flavor and texture of the pork was perfect, and the vegetables were delicious. I served the gravy on the side, but the pork was so moist, nobody used it. I highly recommend this recipe.

Green Bean Casserole by Kikkoman

I loved this casserole, as did my dinner guests. The green beans were nicely complemented by the mushroom flavor. It took a long time for the breadcrumbs to get browned, though ... about 40 minutes, not 20, as the recipe says. Maybe my oven is off. In any case, it was worth the wait!

Slow Cooker Turkey Breast

Cousin David's Slow Cooker Brisket

This was a fantastic dish! I also cut 3 onions, 3 carrots, and 2 red potatoes into one-inch chunks and put them on the bottom of the crockpot before putting the meat in. (I skipped the onion soup mix, and added 2 tablespoons brown sugar and a teaspoon of chile pepper.) I cooked it for about 11 hours. The vegetables were fork tender, and the brisket was perfectly done. It was all so easy, and my friends now think I know how to cook.
