Baked Potato Soup I

One of the best potato soup recipes I've ever had! Even my 10 yr. old who hates soup decided to give it a try a loved it! Thanks for sharing such a great recipe, Sherry.

Hash Brown Casserole II

Liked it but did not love it. Sour cream was a bit much so I think I'd cut back on that a little next time. I cut the salt out altogether because of the cheese and canned soup. Also, didn't care for the corn flake top. Interesting, but just didn't seem to go well. Scraped it off and it tasted much better.

RamJam Chicken

Very good. Only let chicken marinate for a few hours so the flavor wasn't very strong but still quite good. Easy to make and grills nicely. Will definitely make again but marinate overnight as Courtney suggests.

Better Than Sex Cake I

Excellent cake! Not nearly as sweet as I was expecting by the ingredients listed. I did, however, cut back the candy bars from 4 to 3. Seemed like plenty to top it. Makes a lot so unless you want to be eating it for several days, it's better for a larger crowd.

Cucumber Sandwich

A great summertime sandwich! One of my favorites. I used pita bread, my husband prefers tortilla wraps. Pita bread can be a little messy but delicious. I also use low-fat cream cheese and just a couple slices of avocados. Two whole avodacos would be way too much (must be a misprint.) Note to Eggyplant: a pepperoncini is a mild yellow pepper, also referred to as Banana Peppers. They are usually sold in jars near the pickle section. Gives the sandwich a little zing.

Fried Ice Cream

Absolutely delicious! I've been searching for this recipe for so long as this is one of my favorite desserts. Very easy to make, just a little time consuming. I would say you only need about 1/2 the amount of crumbs listed and increase the cinnamon as you can barely taste it. Definitely top it off with honey and whipped cream. Your company will be very impressed!

Fried Cinnamon Strips

I have been making these cinnamon strips for several years. Very easy to make but a little time consuming. I can usually get a rhythm going from one step to another. Be sure to coat them with sugar mixture while they are still warm. They are hard to put down and always go quickly whenever I make a batch!

Chocolate Caramel Nut Cheesecake

Very good. Took it to an Easter gathering and everyone loved it. Think I may add one more candy bar the next time. Cake got a horrible split down the middle and also sank after I took it out of the oven. Anyone have a good explanation why and how I can prevent this the next time? Thanks.

French Toast Casserole

Really good! I made everything the night before so all I had to do was assemble and bake the next morning. Would make a great "company" recipe by doubling up and baking in a 9 x 13 pan. A lot less time than standing at the stove making pan after pan of traditional french toast.

Homesteader Cornbread

Tri-Level Brownies

Really good and liked the oatmeal "cookie" bottom. A new twist on the traditional brownie. Perhaps I was doing something wrong with frosting, however. Was not able to "drizzle" it as the recipe suggests. In fact, it was so dry and crumbly I had to add milk, then just spread it on with a spatula. Still quite good and will make again.

Salmon with Dijon Cream Sauce

African Chicken Stew

Found this dish way too thick and spicy. The peanut butter flavor is really overwhelming. This dish is extremely dry, is something missing from the ingredients list? Read other reviews about adding chicken broth - perhaps that is what this needed. My husband liked it a lot but nobody else did. Doubt I'll make it again.

Simple Beef Flavored Gravy

Overall very good but I had to doctor it up a bit. Because I have to watch sodium in my diet, I used low-sodium bouillon and no-salt butter. Cuts the sodium down from 2,700 + mgs. to about 15 mgs. Because I was using a slow cooker, I doubled the recipe, cooking on the stove top first, then added a jar of beef gravy (this should take care of the lack of salt flavor) but found I had the opposite problem of the previous reviewer. It was way too thin. I sprinkled several Tbsp. of corn starch and that seemed to take care of the problem. I added about 1-1/4 lbs. of cubed beef and slow-cooked for several hours, then served over mashed potatoes. Delicious!

Tantalizingly Tangy Meatloaf

Delicious and really easy to make, although kids weren't really keen on it. They aren't big fans of meatloaf anyway. I would say this recipe will actually feed about 4 people, not 8 as stated. Will definitely make again.

Mouth-Watering Stuffed Mushrooms

Very good. If not using really large mushrooms, be sure to double up the mushrooms to 24, using just 12 stems, as the recipe calls for. I had lots of filling left over.
