Salmon and Pesto with Rice

This was so good and so easy to make. I made a couple changes. I didn't have any shallots so I cut up some onion and added a little garlic. I used chicken stock instead of fish stock. Fish stock sounded nasty and I've never even seen it sold before. I used salmon filets that I did not cut up. I'm not sure why some people commented it didn't look very nice. We thought it looked fine and tasted even better!

Bacon, Egg, and Cheese Strata

We thought this was good and worth hanging onto, but definitely needed something to "kick it up" a notch, whether it be some chopped jalapeño peppers or maybe some jack cheese. All in all, we enjoyed it and I will make again. Also, I think I would add a bit more bacon, it wasn't very noticeable.

Pistachio White Chocolate Chip Cookies

These were SO good. I am not a big fan of white chocolate but thought I'd give them a try and just loved them. I followed the recipe exactly, except I needed 2 or 3 more mins. of baking time. Could have been because it was an extremely humid day. Save yourself some time and buy the already shelled pistachios. It took me 45 MINUTES to shell the cup and a half I needed. I then determined that the shells weighed the same as the nuts so when it's all said and done, you aren't saving a great deal by buying the ones in shells. I bought unsalted pistachios, I think next time I would buy the lightly salted ones, just to give them a bit more flavor. Also, one pkg. of white chocolate chips didn't quite make 2 cups, more like 1-3/4 cups, but it tasted fine. I used a small ice cream scoop and got exactly 7 dozen cookies. Thanks for a great recipe!

Slow Cooker Chicken Taco Soup

This was good and really easy to make but I was faintly aware of the beer taste in the soup which I didn't care for. My husband didn't seem to notice it.

Cheese-Stuffed Flank Steak

Tiramisu Cheesecake

I thought this was good but not great. I followed some others' recommendations and doubled up the kahlua. It seemed a bit strong in the cheesecake portion, although the rest of my family said they barely noticed it. Personally, I would cut it back to 3 Tbsp. I also doubled the amount in the crust, or tried to. I ran out of kahlua (used 2 Tbsp.) and finished it off with another 2 Tbsp. of vanilla. Big mistake. The crust had such a strong taste, it nearly burned my stomach. Should have just added extra melted butter. I also added a little cream, as the recipe states, since the batter seemed too thick. Wish I hadn't have done that. Even though I probably only added 1/4 cup, it seemed to have a hard time setting up. Also, instead of opening the oven door, I kept it closed. Seemed to help. And finally, I discovered that Stella D'oro makes Lady Fingers but calls them Margherites. But shortbread cookies or vanilla wafers would be a good substitute.

Black Bottom Cupcakes I

I don't know if I can fairly judge this recipe because I cheated and used a Devil's Food cake mix, but my whole family enjoyed them a lot. I had enough cake batter left over that I made up two mini loafs out of it. I added some chopped up walnuts to the batter and frosted them with whipped cream cheese frosting when done. I tried some frosting on one of the cupcakes but we found it to be a bit rich. They are good all on their own.

Vegetarian Four Cheese Lasagna

Delicious! I was looking for a way to make lasagna with eggplant and this more than passed my expectations. I made a few slight alterations. First, I cut the recipe in half but still used the same amount of lasagna noodles and used a 7 x 11 pan. I didn't have fresh pumpkin and have never seen it canned so I used the pureed type and used almost a cup. Also, I used cottage cheese in place of ricotta, a personal preference. And I chunked the tomatoes after baking them. My husband and I loved it, no big surprise, the kids wouldn't touch it, so plan to have something else for them.

Swiss Chicken Casserole I

Not sure what I did wrong because I don't see this problem reading other reviews, but everything just slid off the chicken during baking. Even with spooning it back on when serving, we found the taste to just be so-so. Sorry.

Banana Pudding Cake

This is a really moist, delicious cake, but very sweet. My kids loved it, my husband and I agreed that next time, I would omit the icing, add the walnuts to the mix, and just sprinkle the top with powdered sugar when cooled. Either way, it's quite good. Thanks for sharing!

Eggplant Supper Soup

This soup was SO GOOD. I followed the recipe exactly except I was a little short on the eggplant so I added just a little water to make up for it and also cooked the pasta most of the way separately so it wouldn't soak up too much liquid. Tasted even better the second day! Best part is, my kids loved it and didn't know they were eating eggplant! Thanks!

Emma's Belgian Waffles

If you like Belgian waffles but don't like the yeasty taste, then these waffles are for you. Very easy to make and very tasty, though not super light and fluffy. We thought they were just a tad sweet so I think next time I would cut back to 4 Tbsp. of sugar (1/4 cup). Also, I will double the recipe and freeze the extras. I was able to get about about five 7" waffles. Thanks for sharing!

Sorry, we just didn't care for this. Too much time and too many ingredients. I didn't have any sweet pickles and used sweet relish instead. It's possible I got a little too much in the dish.

Bacon Tomato Chowder

I liked this soup a lot and found it easy to make but thought it needed more tomatoes and bacon. I added the rest of the 2nd 14.5 oz. can of diced tomatoes I was using, plus cooked up 4 or 5 more strips of bacon. I think next time, I would use one can of Italian diced tomatoes. Tastes better the second day.

French Silk Chocolate Pie I

I have been making this exact recipe for years except my recipe calls for a little more of each ingredient: I use a 9" crust, 3/4 cup butter, 1 cup sugar, 3 squares unsweetened chocolate melted and cooled, 1-1/2 tsp. vanilla, and 3 eggs, beaten at med. speed for 5 mins. after each addition. Sometimes I double the filling and use a deep dish crust. There is usually extra filling left over so I buy mini graham cracker shells and fill those. Be sure the pie chills for at least 2 hrs. before serving. Top with defrosted whipped topping and chocolate shavings. My husband prefers this for his birthday instead of a cake! Enjoy!!

Chicken Paprikash II

I found this to be way too spicy with not enough paprika taste. No matter how much doctoring I did, I could not get the heat from the crushed pepper flakes less noticeable. I think I will stick with my original recipe I've used for years. Sorry.

YIKES!! These were really sweet! I wish I would have listened to others' recommendations and cut the sugar down to 1/4 cup. I used a small ice cream scoop and got exactly 3 dozen cookies.
