Italian Cream Cake II

This was delicious but really, really sweet. I made as stated except I didn't add extra coconut into the frosting and am glad I did not. I think next time I will cut the coconut in the cake back to about 3/4 of a cup. Just a personal preference. Other than that, quite tasty and made a nice presentation. A keeper for sure.

Super Easy Seared Ahi Tuna

This was so good and so easy to make. I had 4 - 4 oz. filets, about 1" thick. I made exactly as stated, except I turned the heat to med. - high instead of high because it seemed way too hot and the oil was burning. 45 seconds was just the right amount of time. We whipped up a quick sauce of sour cream, dill, garlic powder, and a dash of lemon. Delicious.

Thick Cut-Outs

This cookie alone is pretty bland, even with adding extra sugar, another teaspoon of vanilla and a teaspoon of almond extract. I thought more of a butter flavor would come through. But with the icing on top, it's quite good. I used my own decorator icing recipe, which is similar, then made this one when that ran out. Be careful not to add too much water - it gets thin rather quickly. I got about sixty 3" - 5" cookies.

Garlic Brussels Sprouts

I just made this exact dish except my recipe called to cut the brussel sprouts into thin slices and that also cut the cooking time down to about 5 mins. I've never liked brussel sprouts but loved this recipe.

Pumpkin Chocolate Chip Cookies III

Spooky Witches' Fingers

It took me 3 batches to get these right. I had a big problem with the dough spreading making the fingers look all fat and flat. Finally, on the 3rd batch, I used 1/2 butter and 1/2 butter Crisco and had much better results. I still couldn't get the knuckles quite right. Check out "Tails" photos to see how they should look. We thought the cookie was very tasty, almost like a shortbread cookie.

Cheesecake Cookie Cups

This was good but REALLY sweet. I think next time I will use one of my own cheesecake recipes. Also, I think I purchased the wrong type of cookie dough and each cup had way too much in it.

Texas Ranch Potato Salad

This is really good and so close to my favorite pot. salad that my local deli makes. Like others, I substituted 1/2 of the mayo for sour cream. Next time, I will add about 1# less potatoes just to give it a bit creamier of a texture. Over all, quite delicious! Got me over my fear of making potato salad.

Special Irish Beef Stew

As others have stated, this is a REALLY tomato-y stew recipe. I countered it by adding a second can of beef broth. I used 2 lbs. of meat, a little less carrots and a little more potatoes than called for. Also a touch of oregano and basil. And it definitely needs salt and and pepper. My husband loved it and this will be our keeper stew recipe as I've been looking for a good basic one for quite some time. Thanks!

Cool Fizzies for the Kiddies

So delicious and so easy to put together. I doubled the recipe and it fit nicely in a regular pitcher. I like the idea of some sherbet in it to make a nice punch. Think I'll go have another glass now. :-)

Key Lime Cheesecake I

I try to read the reviews of recipes before I make them and wish I had with this one. This is a really good cheesecake but it is so tart to the point of being bitter. Some people recommending using less lime juice and that would have helped immensely. I may make again but will cut the juice down by nearly 1/2. I can't comment on the crust as I have a favorite I use for all my cheesecakes and used that.

Calico Bean Casserole

I printed this recipe up several years ago and finally got around to making it. It is delicious. I didn't change a thing. The kidney beans didn't cook up as well as the other beans but still quite tasty. This is the perfect dish to take to a gathering. Just be sure to serve with a slotted spoon as it is quite juicy.

Rhubarb Cake III

This was very good and very sweet, even though I cut back on the sugar to 1 cup, as others have recommended. I baked mine for the full 35 mins. and it could have used more time. I think part of the problem may have been that the rhubarb developed a bit of a juice sitting in the sugar waiting to be added in. I think next time, I would drain the juice, although possibly that helped with the flavor. We loved the flavor, it was just a little TOO moist and didn't cut neatly.

Warm Goat Cheese Sandwiches

We liked these sandwiches pretty well but it is VERY salty and in general has a very overwhelming flavor. I would like to try it again sometime with my own pesto, which tends to be less salty. And also not layer the ingredients on quite so thickly.

Chicken Pesto Pizza

Good and easy to put together but it is SOOO salty. I used bottled pesto and would like to try this again with my own pesto sauce, which generally isn't so salty. I even washed the artichokes but that didn't help much. Overall a good recipe.

Best Lemonade Ever

After reading a lot of reviews and some people complaining it was too sweet and others complaining it was too tart, I decided to try the recipe exactly as written. We prefer our lemonade tart and like many others, found it to be way too sweet. I ended up adding 2 more cups of water and another 1/2 cup of lemon juice (I used bottled since I didn't have any fresh lemons and want to try it with fresh, which I think will be even better) and came up with what we thought was a pretty good batch of lemonade. Tart like we like it, with just the right amount of sweetness. I really liked the idea of cooking the sugar and water first. Although a bit more time consuming, you are assured that the sugar is well blended instead of sitting on the bottom. Good recipe!

Margarita Marinade

I tried this on chicken and it was o.k. The alcohol flavor is very noticeable. I think I'd like to try it on flank steak the next time like the submitter suggested. It seemed to be missing a little something, maybe as simple as salt?
