Creamy Chicken, Bacon and Tomato Pasta

Reviewed: Feb. 4, 2011
Loved this. I was looking for a pasta dish with chicken, bacon, and tomatoes, and this fit the bill. I followed the recipe exactly except I used regular pasta and threw in an extra slice of bacon. I think it would be great with a couple dashes of hot pepper flakes, or a couple sprinkles of cayenne pepper, just to give it a little extra kick. The leftovers were fantastic. Thanks!

Creamy Chocolate Frosting

Reviewed: Feb. 2, 2011
I thought this tasted pretty good but it never got very thick. I ended up adding a bit more conf. sugar and cocoa, then added 2 more Tbsp. of butter. It helped but still not quite there. And I was only able to cover 20 out of 24 cupcakes.

Brown Family's Favorite Pumpkin Pie

Reviewed: Dec. 15, 2010
I was a little reluctant to try this one because of the crumbly top but we loved it. Followed the recipe to the letter. It tasted even better the next day after the spices had more time to meld.

Reuben Soup

Reviewed: Sep. 3, 2010
I do NOT like sauerkraut but since my husband loves reuben sandwiches, I thought I'd give this a try. Wow, was it ever good and so easy to make. I followed the recipe exactly but rinsed the sauerkraut a little bit, and also used no-salt swiss, and 1/2 of the bouillon was no-salt. Tasted perfect to us. We loved it. A keeper for sure!

Chiles Rellenos (Stuffed Peppers)

Reviewed: Aug. 28, 2010
I followed this recipe mostly but didn't want beef in it, just cheese. We used a Mexican cheese blend. Followed the directions the rest of the way and then made a sauce of 1 - 15 oz. can of tomato sauce with 1 can of Original Rotel tomatoes. Very spicy and tasted really good.

Sangria! Sangria!

Reviewed: Aug. 28, 2010
Maybe it was just us, because this recipe got so many rave reviews, but we found it to be way too strong for our liking. I think I'll make it again and cut back a little on the brandy and triple sec. *FOLLOW UP* - I made this recipe again, this time using rum instead of the brandy. I cut back just a tad on the rum and triple sec, and used the ginger ale in place of the carbonated water. HUGE improvement. I would say this is now a 4 star recipe. Also, do not like maraschino cherries so I used strawberries instead.

Grandma's Lemon Meringue Pie

Reviewed: Mar. 24, 2010
Really good and easy to make. I like the fact that it calls for using the zest in the pie, which the recipe I've been making for years does not.

Grilled Mahi Mahi

This was good and really simple to make. I followed the recipe exactly except I didn't have the pepperjack cheese and used Meunster instead. I'm glad I did as the dish was very spicy already.

This was fabulous. I made it exactly as stated. I would say you could easily cover 6 chicken breasts with all these ingredients. A keeper for sure!

Fudge Puddles

Reviewed: Jan. 16, 2010
I was really hoping to like this more. The p.b. cup seemed a bit dry and the fudge center was a bit rich for my liking. Probably just me as it got so many good reviews.

Sandy's Chocolate Cake

Reviewed: Sep. 21, 2009
Pretty good, but not quite as chocolatey tasting as I was hoping and a little too dense. I did use a different icing than the one with this recipe, so I can't speak for how the frosting tastes.

Strawberries with Balsamic Vinegar

Reviewed: Jul. 7, 2009
I wasn't sure I liked this at first but the taste grew on me. This would be a great way to serve plain strawberries without the usual whipped cream, etc. Blueberries could also be added in.

Bay Scallop Chowder

Reviewed: Jun. 6, 2009
This was excellent. I was a little afraid of how it was going to taste because of the slightly fishy smell as it was cooking but it's wonderful. I made it exactly as posted except I had to use 3 cans of mushrooms instead of fresh, since that's all I had on hand. My recipe looks a little more green (from the herbs) than the picture shown.

Cake Balls

Reviewed: Apr. 10, 2009
I made mine look like mini cupcakes (melted chocolate in the bottom of the mold, the ball on top, then dip in chocolate after it sets). They looked really cute but were time consuming, and as others have stated, the texture of the cake is just such a turnoff. It feels like it's been pre-chewed or something. If someone can come up with a better cake recipe for the inside, I'd love to try it again. I did not have any trouble making them into little balls - I used a mini ice cream scoop and rolled them to uniform sizes. **UPDATE** - I made these again for the 4th of July and only used about 2/3 of a can of the frosting. Wow, what a difference. The cake still held together and was moist and dense but not gummy. It was not messy to work with and some people even thought it was fudge on the inside. I would say with this simple alteration, it's now a 4 star recipe!

Blackberry-Chocolate Chip Pie

Reviewed: Apr. 1, 2009
I've been wanting to make this pie for months and finally had everything on hand that I needed. I took others' recommendation of cutting back on the chocolate chips so I did by half (to 3/8 of a cup) and am glad I did. It was a nice fruit pie with just a hint of chocolate - not overbearing, or overly sweet, at all. It was also a perfect blend of all ingredients which made a pie that had a little "sauce" to it but didn't ooze out when cut. I also did an egg wash on the crust before baking. Delicious!

Chunky Monkey Pancakes

Reviewed: Mar. 11, 2009
So good and so easy to make. I think next time I will cut the choc. chips back to 1/3 of a cup. The chocolate was just a little overwhelming, and that's saying a lot coming from a chocoholic like me. I would just rather taste more of the bananas. We had a couple left over and I just dropped them in the toaster the next day for a couple mins. I think they tasted even better on day 2.

Soft, Moist and Gooey Cinnamon Buns

Reviewed: Jan. 11, 2009
These were very good! I did not have a bread machine so I used my KA mixer with the dough hook. I had to add a little more flour to get the dough the right consistency (maybe a couple more tablespoons). I let it rise for about 1-1/2 hrs., punched it down, let it rest for about 5 minutes, then rolled it out and followed the directions from there. The only thing I did differently was to use maple flavoring instead of vanilla and I used three 9" round cake pans so I could give one of the pans away for a gift. I think next time, I will add a little more butter and definitely more cinnamon. It did not have as strong of a cinnamon flavor as I would have liked. Oh yeah, I also made a little extra of the topping. A definite keeper!
