Pumpkin Fluff Dip
I was looking for a recipe using pumpkin that my preschool class might enjoy when I came across this one. Perfect! Many of them tried and those that did all liked it.I was shopping without the recipe and unfortunately my memory was lacking so as prepared by me it went like this: 16 oz pureed fresh pumpkin,1 8oz container cool whip, 1 3.5 oz pkg instant vanilla pudding mix, 3 T. maple syrup, and "some" cinnamon, cardamon, nutmeg, allspice. It was very good and I would make it that way again.

Although the first batch I made had the oil problem noted by other reviewers I tried again and the next several batches came out wonderful. Only thing I did differently was change pans. The batch where the butter never fully incorporated was made in a non-stick pan. When I switched to regular stainless steel it worked great. Don't know if that was the reason or just coincidence but I changed from my old recipe of many years to this one for the rest of my Christmas cooking. Fast, easy and YUM! Can you say teacher gift?

Absolutely Perfect Palak Paneer
Thank you!Thank you!Thank You!I've been looking for a good recipe for Palak Paneer. THis one was yummy.I heeded the advice of those who went before and used plenty of salt and also coarse chopped the spinach before cooking and skipped the processing. I didn't have any ricotta or tomato in the house and was dying to try it so I substituted extra firm silken tofu and just skipped the tomato. It was still delicious!
