Ricotta Gnocchi

I love Ricotta Gnocci! I double this recipe with everything but the eggs. I just use 2 eggs when doubled. And I make my own sauce. Very good!

Jalapeno Snacks

I wasn't sure what to expect with these but they were sooo good! I precooked the bacon in the microwave a little to make it crispier. I also soaked the peppers in icewater for about 1/2 hour after I halved and seeded them because I wasn't sure how much heat our guests liked. I'm debating about baking them on a rack next time to cut some of the bacon grease but eveyone raved about them!

Old-Fashioned Italian Zucchini Fritters

I made these tonight and they are excellent! I just shredded the zucchini, didn't use any diced, and added a smidge of garlic powder. Other than that followed the other ingredients in the recipe exactly. Yummy!

Italian Sausage with Farfalle and Broccoli Rabe

I made this recipe exactly as written and it was absolutely delicious! Broccoli rabe is a slightly bitter green and it gives this recipe such a great flavor. Love it!

Baked Ziti IV

I'm always looking for a baked ziti recipe that is not dry and this fits the bill. It's very flavorful too. I did add some Italian seasoning, romano cheese and cut up some red peppers (because I had them in the house) and also used my own sauce. It was really delicious!

I've made potatoes many different ways over the years and this simple recipe is really delicious. I rated it a 4 because the cook time is off, it needs to cook at least an hour.

Pizza Dough III

I followed the recipe, as far as the ingrediants go exactly. I mixed everything in my Kitchen Aid mixer with the paddle attachment until mixed then used the dough hook and kneeded it for a few minutes. I added a little more flour while it was kneeding until it was the right consistency. The only thing you have to be aware of is using the right yeast...Be sure to use the regular active dry yeast, not the rapid rise. I made that mistake the first time I made this and the dough didn't rise very well. Also be sure that the water is at the right temperature, it makes a difference.

Zippy Swiss Steak

This is an excellent recipe for a cut of steak that can be tough. I bought this eye of round steak because it was on sale but I wasn't quite sure what to do with it. I found this recipe and it fit the bill. The steak was so tender..I couldn't believe it! I made a few adjustments because I didn't have all the ingrediants on hand. I didn't have chili's so I used some jalapenos,(which I had in the jar) it made it spicy but tender and delicious. Just realize that it does take 2 hours in the oven, but it's really worth it. Great recipe! Thanks!

Great flavor! I followed the recipe exactly although I did put it under the broiler for 2 mintues at the end to crisp up the top. The amounts of ingredients were spot on. I loved it.

Italian Anise Toast

Great and easy recipe. It was everyones favorite at Christmas. The only thing I did differently was add 1 tsp. anise extract because we like a little more of the anise flavor. Besides that it was a perfect anise toast recipe!

Seven Layer Taco Dip

This is a great seven layer dip recipe. It turns out perfect and is always a hit! I add jalapenos for a little kick. It does make a large amount so it's great for big gatherings.

Kickin' Collard Greens

This is a great recipe! I make it with frozen chopped collard greens usually. I usually cut down on the chicken broth by half. If there is too much broth before serving just drain it a little. Great taste!

Jamie's Cranberry Spinach Salad

Wow, this is great!!! I tried to follow the recipe to a "T" but realized I only had red wine vinegar and white vinegar. I used those instead and it was still awesome. I know this is a healthy recipe but it is definately not low fat. That's ok, I splurged and we loved it!!

Artichoke Cheese Dip

I really love the taste of this but I thought it was too oily. I had to keep scooping the oil out of it, making it difficult to put out and serve to guests.
