Easy Mushroom Rice

I made this recipe as written. It is really good, and easy to make! I especially liked that I didn't have to cook the rice first. Makes a quick and very good side dish for a weekday meal. I'm going to keep these ingredients on hand so I can make this any time.

Goat Cheese Arugula Pizza - No Red Sauce!

I have to rate this because I made it the other day, but used my own pizza crust, and my husband LOVED it! I make pizza all the time and he said this his favorite! Great combination of toppings!

Balsamic Goat Cheese Stuffed Chicken Breasts

This was a really good recipe! I made it exactly except for the shallots (used an onion instead) and it was delicious. I have to say if the vinegar flavor is too strong you are probably not reducing it slowly enough or long enough. It does have a great flavor.

Mushroom and Gorgonzola Soup

This soup is amazing! I followed another reviewers advice and sprinkled the flour over the onion, garlic and mushroom mixture, and then added the other ingredients. I also think the mushrooms could be doubled but it was still delicious!

Chicken Florentine Casserole

Excellent recipe! When I melted the butter in the saucepan I browned the chicken breasts in it, then sauteed the mushrooms (doubled the amount of mushrooms) in it. I used frozen spinach, defrosted and squeezed the liquid out. I followed the rest of the recipe. Baked at 350 for about 40 minutes. We all loved this!

Gourmet Mushroom Risotto

This is awesome! It does take longer than the recipe calls for, don't do this if you are distracted by another dish...it does take time, but it is wonderful! And I didn't use wine because I usually don't like the taste of it in dishes. Also I used Romano cheese. I just loved this dish!

Ricotta Gnocchi

I love Ricotta Gnocci! I double this recipe with everything but the eggs. I just use 2 eggs when doubled. And I make my own sauce. Very good!

Old-Fashioned Italian Zucchini Fritters

I made these tonight and they are excellent! I just shredded the zucchini, didn't use any diced, and added a smidge of garlic powder. Other than that followed the other ingredients in the recipe exactly. Yummy!

Italian Sausage with Farfalle and Broccoli Rabe

I made this recipe exactly as written and it was absolutely delicious! Broccoli rabe is a slightly bitter green and it gives this recipe such a great flavor. Love it!
