Ceviche

This was my first time making ceviche. I followed this recipe aside from using dry cilantro instead of fresh. I also omitted the celery. It really is delicious and refreshing! Next time I will probably try using shrimp instead of scallops. This particular recipe is best used for dipping with tortilla chips, I don't really like it by itself.

Cream Puff Cake

I loved this recipe except the filling seemed a little too thick...I added a half tub of cool whip to the filling mixture and it still seemed not creamy enough. Next time I'll add a full tub of whipped cream to the filling. Still delicious though. UPDATE***I mad this again over the weekend and added a layer of nutella on the bottom before adding the filling. DELICOUS!!!!

Quick Chili I

Really good, first time making chili...my boyfriend loved it! Used ground turkey instead of beef and added hot sauce to taste. I served it with cornbread.
