Easy Sugar Cookies

Only change was to double vanilla. Great cookies to put sprinkles on with the kids. Easy, fast, and made a lot more than I was expecting.

Pumpkin Cake III

Easy Batter Fruit Cobbler

I made this with blueberries and blackberries that were on their last days. I usually make recipes with high ratings because I know they will most likely turn out really well - but this one left something to be desired. The dough part just wasn't what I expected at all. It was very sweet and not very cake like. It was certainly quick and easy to make, but I don't know if I will make it again.

Baked Ziti III

I made this recipe basically as written - I had bowtie pasta on hand so I used that, I didn't have provolone so I used all mozzarella, and I left out the basil. I tend to just wing it when I am cooking and use what is on hand. My husband really liked this pasta. I'll definitely make this one again. So easy and he was impressed. I made it up to the point of baking then left it on the counter a little while waiting for him to be closer to finishing working so it would be hot when he got home. I think you could refrigerate and bake at a later time to make it more convenient as well.

Blueberry Zucchini Bread

Awesome. I made this as written just rounding down the sugar. I pureed my zucchini til it was basically a lumpy liquid and you couldn't even tell the bread was a zucchini base. I made two loaves with this - they were a little low in height, but perfectly fine - probably baked better than if there was more batter in the pans. I would definitely make this again.

Hamburger Steak with Onions and Gravy

loved it. I didn't have sherry and omitted the season salt - it really didnt need any more flavor or salt - but otherwise I followed the recipe. I did make more gravy - I could use a ton more gravy. I served it with mashed potatoes.

Fudge

I made this recipe with peanut butter chips as I didn't have enough chocolate on hand to do the whole recipe. I thought it was okay - not like my go to fudge recipe - but I didn't have any marshmallow cream on hand. I think that fudge is better with the marshmallow in it - it adds a lighter texture to the fudge - but this recipe is good if you want a dense, rich fudge and/or you don't have any marshmallow at the time. I would make this again and try with the chocolate next time. I used unsalted butter as that is what I keep on hand for baking. I might try with salted butter next time to see if it changes the flavor much. Overall - the easiest fudge recipe - so fast, the taste/texture - fine, but not what I am used to.

Cream Cheese Pound Cake III

Made this cake last night to go with dinner. It was very easy to make with the simple ingredients and directions. I was looking for a pound cake loaf but decided to try this anyhow. It turned out great. My only complaint is trying to wrap a cake this shape to keep it from drying out is difficult. I put it in a plastic cake carrier and this morning the cut ends were a little dry. Other than that the cake is great. Its the same today as it was last night. I made the recipe exactly as it is written. I wouldn't make any changes unless you wanted a flavor like lemon or something, but we like it as is.

Oatmeal Blueberry Muffins

This made 12 smallish muffins for me. I liked the taste. It didn't have too much sugar or oil I thought. I made it just as written. They came out tasting like a muffin, not a cake which I wanted. I used large fresh blueberries. I think small or frozen would've been better but it was good for me. The kids aren't going to like the huge berries though. This was a very easy recipe. Will definitely make it again and maybe try different berries or apples and add a topping. I couldn't tell there was oatmeal in them once they were cooked.

Hamburger Soup I

ok, so I didnt have everything on hand to make this, but what I was able to put in it was great. So, regardless, I'm rating this as 5 stars - it was good, and easy to adapt if you need to. I didnt have tomato sauce, so I just used more ketchup. I also used all frozen vegetables. I left out the basil just for preference and added garlic and onion powder. I also added elbow macaroni. So easy and so quick to throw together while the baby napped. Will certainly make this again. Tastes like homemade but no one would guess it took less than five minutes to put together then just let simmer til you want to eat it.

Baked Oatmeal I

I made this with applesauce in place of the oil and brown instead of white sugar, and no raisins. I also just add the cinnamon in the mix rather than try to sprinkle it evenly. I havent tried to refridgerate it overnight, I just dont plan ahead that much. I also added fruit - the first time I did blueberries and half plain, the second time I added 1 1/2 bananas and 6 strawberries. I definitely like the bananas and strawberries better than plain, and the blueberries were good too. I cover it with milk when I eat it, my toddler eats it straight from the pan (its dense enough to cut up for her to pick up and eat). Definitely a good recipe - will keep making it. Works great to reheat the second morning for quick breakfast. This would be good to feed a crowd if you made a few of them. Its so easy.

Three-Cheese Spaghetti Bake

This was a good, simple recipe. I like recipes that can be made when I have the baby napping and still have hot when he gets home from work. I made this one and just baked it when he called to say he was heading home. I didnt have the parmesan or romano cheese, but I didnt miss it. I added a can of mushrooms and cooked ground turkey to the top before pouring on the sauce. I will definitely make it again. It would be good for dinner at home or potlucks.

Blackberry Muffins

I thought these were okay muffins. The oatmeal made them a bit chewy, but my toddler liked them with her breakfast. I left off the extra sugar on top and used light brown sugar, but otherwise made them as listed. Not sure if I will make them again, but not bad to add to a toddlers meal to get in a lot of food groups at once if you dont mind the brown sugar. I did mix my berries up so she didnt get chunks of berry all at once so my muffins turned out a blueish green color, so be sure to fold gently if you want yours to be pretty.

Zucchini Brownies

I thought this was a good recipe - I made it exactly as written only omitting the nuts. I havent made the frosting yet and I am not sure if I will or not. The brownies are really more like cake, actually, I wouldnt call it brownies at all. I think it would be great with the icing, but they are filling my chocolate craving as is with out the extra fat and calories. Its a really rich cake and very moist. I added some of the water from the bottom of my shredded zuchini bowl to the measuring cup with the zuchini. My batter was thick but still very manageable. I used my first zuchini from my garden which I apparently overlooked because it was nearly 2 feet long when I picked it a couple days ago. I was afraid it wouldnt be good cooked so I decided to bake with it. Either it was really good or this recipe is perfect with very large, possibly tough zuchinis. I dont think anyone would ever know there was zuchini in this recipe. Perfect for someone who cant have eggs or wanted a vegan chocolate cake (with another icing of course)

To Die For Blueberry Muffins

I made this recipe exactly as stated and it turned out great. The only change I might make is to add another 1/2 cup of blueberries next time. Its alright with the amount stated, but I think more would be even better. I baked 12 regular sized muffins. They baked perfectly and high. I only used maybe half of the topping to be sure they wouldnt sink. Excellent recipe. Thanks.

Blueberry Oat Waffles

I thought these were okay. The kids did not like them, but they are picky eaters. I could have used more blueberries, or maybe mushed them up before adding to the batter so they were more spread out. I just thought the texture was a bit off - maybe its the oatmeal. I'm not sure - they were really dense feeling to me. I would make again for the baby for the fact that they are pretty healthy - I subbed the oil for applesauce as another reviewer suggested. She liked them and doesnt add anything on top of them.

Kettle Corn

I made this last night not expecting much. I already pop corn in a pan on the stove with crisco - so I didnt think just adding sugar would make it like fair kettle corn. Why did I not think of this years ago??? It really did taste good. I over cooked mine just a smidge because I wasnt ready for it. Have your bowl ready and shake, shake, shake that pan til it is popped. I put a bit of salt on after it was cooked.

Mama's Asian Chicken and Rice

I didnt have the five spice, pepper flakes, or orange peel, but decided to go ahead and try to make this recipe. It was so good. I dont know what those ingredients would have done to it - but this is certainly a keeper recipe. I should have followed others suggestions and doubled the sauce - it wasnt quite enough to cover the rice. Next time I will double the sauce and add vegetables to make a complete meal out of it.

Microwaved Potatoes Lyonnaise

It doesnt get any easier. I used small potatoes that I just into 4 or six bite sized pieces. I didnt have paprika but did throw in rosemary that we like. Super simple while the chicken cooked on the grill for a quick lunch. Use more spices if you like to really taste them.
