OK, too oniony with only half the onion. Would make again, halving the recipe and cutting onion by 75% or using sweet onion

Chiles Rellenos de San Joaquin

This was an unusual, unattractive dish. Even doubling the tomatoes failed to turn the onions and tomatoes into a "sauce." This is also a LOT of poblanos to serve 4 people. Because I am eager to find good relleno-like recipes that don't include breading the chilies, I may try this again, with significant modifications, including choppping the onions, tripling the tomatoes or adding tomato sauce, adding more spices to the "sauce" and a cheese that will melt at 350 after 30 minutes. It also got really soggy in the pan- not sure how to prevent that. I really, really wanted to like this.

Spinach Lasagna II

Very good. I used a jar of sauce and no-bake noodles. Even my ricotta-hating husband liked this one. Simple and delicious; we'll definitely be making this again.

Quinoa and Black Beans

This was really, really good. I made it exactly as written- the beans seem like they'll be too much, but it's just right. I served it with sides of chopped tomatoes and sliced fresh jalapeños. It is going in our 'favorites' folder.

Chili Relleno Squares

If the egg/milk/flour mixture isn't at least doubled, the result is a slimy, greasy mess. It's basically 5 cups of cheese baked with some chilis. The 2 eggs don't come close to holding it together, I don't know how one could make 'squares' of this as it is.

This was very, very good. Expect a mildly spicy avocado hummus. Preparation was quick and easy, and Husband and I made a light meal of it with warm whole-wheat pita.

Lemon Supreme Pie

I just use lemon pudding from a boxed mix for the lemon-y part to save time, but this is a great recipe that makes a light, sweet ending to a heavy or spicy meal.

Blueberry French Toast

To facilitate easier serving, I slice the bread into 12 slices, then make six "sandwiches" with cream cheese on each slice of bread and a small handful of blueberries. I cut cut each sandwich in half, then fit the halves in a 9 x 13 pan. In the morning, I flip over each sandwich so the soggier side is on top and the drier side is on the bottom before baking. This ensures 12 clearly defined portions, easy serving and eating, and even distribution of the egg and milk mixture. I bring this whenever I need a brunch dish for work or other gatherings.
