Chile Colorado

Excellent Recipe. I Read a review from someone who said it didn't taste like chili colorado ( then you don't know what chili colorado taste like :) ). It taste exactly as it should. I did change the recipe per my preference. First i used "Smoked chilies" that i smoke myself every year. Then i smoked it with an open dutch over for about 2 hours on my pellet smoker. I then finished it inside with a closed lid. Each person is going to like different consistency in thier chili colorado. For me it was too thin. So at the end i just made a roux and added it to the pot for the perfect consistency. My wife is very picky and doesn't like a lot of mexican food i like and she absolutely loved this so i will be making it again. Thanks for the recipe

Jeff's Hot Dog Chili

Made this last week. Very very good good. I would disagree with some reviewers saying it was too thin. I think it was just right. If you think yours is too thin for your taste just cook it down a little more. The flavor i think was excellent. I made a minor modification by cooking it in a cast iron dutch oven in my outdoor smoker (which i highly recommend). Its definitely a great base recipe to modify for your needs. I recommend making it as directed the first time and check to see how you would like to adjust it from there.

Donut Muffins

This is definitely a 5 star recipe. Me & my wife just loved these muffins. The only small change we made to the recipe was to use a regular muffin tin instead of the mini-muffin tins (because we don't have one). In our oven with the convection setting on 20 minutes was just right @350F

Quick Chicken Peanut Mole with Cilantro Rice

Pretty good. My wife is pretty picky and we both enjoyed it. Be aware this review is mostly for just the sauce. I didn't make the rice. It didn't sound good. I made my standby cilantro rice. My wife made her basic chicken asada that we simmered in the sauce. The only thing about the sauce that i had to change is that i had a 10oz can of diced tomatoes & green chilies instead of a 14.5 oz can. Definitely will make it again. I can see the sauce being good for a variety of things. Maybe pork, maybe a burrito...

Best Lemonade Ever

Sometimes the simplest things are the best. Enough Said about this recipe. I like using simple syrup more than just mixing sugar and water. This will be my stable i'm sure.

Pleasant Pork Chops

Pretty Dang good recipe. I would recommend making the changes that i made though. They were slight but i think they would make the difference. The first thing i thought when i read the recipe was "dry" pork. I went to go read the reviews and in fact a lot of people said the chops were dry. How do you fix? Easy just cook them less. I cooked mine for 35 minutes instead of an hour. The next thing is the sauce is truely the star of this recipe. I can see using the sauce for other meats such as chicken. Anyways, this is defintely not one of those recipes were you want to use cheap paprika. Go for the gusto here and use some of the more pricey stuff. I used smoke variety but real hungarian paprika would probably also work out nicely. The paprika is one of the bases of the sauce that makes this dish taste so wonderful

Buffalo Chicken Dip

I don't generally give very many recipes a 5 star rating but this one deserves it. It was awesome dip that i will definitely make very soon again. The only change i made to the recipe was to use rotisserie that i shredded rather than canned chicken and i used scoop fritos rather than the chicken crackers. I can't think of anything i would change other than the amount of hot sauce i used if i had some people over that weren't heat lovers like i am. 3/4 cup was perfect for me but id probably lower it to 1/2 cup for my family. It all depends on the hot sauce your using of course. I used Franks Red Hot as the recipe suggested.

Jamie's Minestrone

In Jamie's description she says "lack of veggies" this soup definitely has the veggies. Nice hearty soup for a winter day. It was excellent. Another + is that its HEALTHY. I made a few minor modifications other than made it exactly like the instructions. I substituted crush tomatoes for tomato sauce. I also couldn't find fresh basil/oregeno so i used dried. The only thing i might try with this recipe in the future is to put a parmesian reggiona rind in the soup (don't throw those rinds away).

Easy Slow Cooker French Dip

I used to be a crockpot snob. Not anymore. I thought that something out of a crockpot couldn't be that good. Boy was a wrong. I made some modifications to the recipe after i read the comments. I don't know how authentically you can rate a recipe when you change the details but anyway here goes. This is how i changed the recipe: 1) Used beef consume rather than beef broth 2) put a package of onion soup mix to the pot. 3) Cut up 1/2 sweet onion and added to the pot. I cooked this on a sunday night and let it cool in the fridge overnight (meat soaking in the juices). I then sliced the meat very thin the next day (still cold) with my meat slicer. I then put the meat back into the meat juices and put it back in the fridge. Tuesday i just slightly warmed it. Boy was i suprised. The au jus was the star of the show. It was very good. It was a tad salty but that might have been the onion soup mix. I defintely adding this to my recipe book

Cuban Midnight Sandwich

Very good sandwich. Not 100% authentic but WHO CARES AS LONG AS LONG AS IT TASTE GOOD!! yes this sandwich is not an authentic cuban sandwich its really more of a cuban inspired sandwich. I have to admit i was a little hesitant at first because of the mention of the mayo/italian dressing combination. Then i was going to maybe put the mayo on after i put it in the panini machine. At the last moment i decided to follow the recipe exactly and i'm glad i did. It was a very good sandwich. This along with a bowl of soup is a very satisfying combination.

Old Fashioned Onion Rings

Pretty good if i say myself. Secret is to have a pan so you don't have to put the onion rings on top of each other. The combination of a battered onion ring with bread crumb crust was just right. These are as good as i have tried in any resteraunt. I did replace the milk with buttermilk. Some things to mix it up would maybe use beer or instead of bread crumbs use panko bread crumbs (i might try this next time).

Pumpkin Apple Streusel Muffins

I think this is one of the few recipes that i have ever given 5 stars. It was awesome. This is the first time i have made muffins too. For some reason i was thinking that pumpkin muffins sounded good so i went searching for recipes for it. This one was a little more exotic and i'm glad i made it. I was thinking "what would make these muffins even better". I didn't try this but maybe if you made some cream cheese frosting on the top after they come out of the oven would be very good i bet.

Charley's Slow Cooker Mexican Style Meat

I don't think this is as good as everyone makes it out to be. I am not saying its horrible or anything like that but it definitly doens't deservere 5 stars. Its quite spicy so unless you like heat beware (i love heat). I probably won't make it again because there just wasn't anything special about it.

Jimmy's Mexican Pizza

This recipe was better than i thought it would be. I picked it because it appeared to be very easy. It was very easy to make and tasted pretty good. I would not give it a 5 as a perfect. Very few recipes get this but i think it deserves a 4. The only thing is the tortillas weren't really that crisp after it was done so the pizza was kind of droopy but it was still good. Very good idea how it was put together.

Best Marinara Sauce Yet

This has to be the best marinara i have tried as of yet. A lot of marinara's are heavy and don't taste that good to me (taste more store bought sauces) and have to much seasoning in them. This was perfect. Only change i woudl probably add more garlic..not because i don't think 1 clove is sufficient but because im a garlic lover :)

Cheeseburger Soup I

I don't give anything 5 stars unless its downright awesome. This soup was definitly good and i would make it again but it wasn't downright awesome. I was contimplating between 3 or 4 stars but i decided to give it 4. The only slight modification i made to the recipe was the use of scallions because i had some around oh and a bay leaf. I think the key to this recipe, as for any recipe that calls for it, is homemade chicken stock. Chicken Stock/Broth from the store will not compare and it won't taste nearly as good. I also think its better to use a waxy type of potato like a red potato or a yukon gold in this so it will hold its shape and not break apart. The things it think you could do to improve on this recipe would be to use roasted garlic or substitue half-n-half for milk.
