Beefy Beef Chili

Reviewed: Nov. 11, 2009
This was a rather odd chili, but good-tasting. I wasn't sure of the purpose of the beef stew, nor the brand/kind so I added one large can of Dinty Moore. I also substituted V8 for the tomato juice, but put half of the amount called for (one 11-oz can), as I like my chili thicker. It was ready in the 30 minutes that my cornbread took!

Good, very subtle honey flavor, even when I doubled the recipe's amount.

Chuck's Favorite Mac and Cheese

Reviewed: Oct. 14, 2009
I was lazy. I started with Velveeta Shells and cheese, then added the extras. Very rich, very thick and very good!

Sour Cream n Cheese Potatoes

Reviewed: Oct. 4, 2009
Good... but a little odd, too. The chicken and sun-dried tomato 'pesto' came out almost as a separate recipe, and need some tweaking on their own... the potato/green pepper/onion side was amazing, however. I'm going to tweak the chicken a bit and try again... this time either without the sour cream on top, or with doubling the 'pesto' mixture and mixing half of it with the sour cream when I bake. All said, very good!

Honey Roasted Red Potatoes

Reviewed: Sep. 29, 2009
A few alterations: I doubled the butter, honey, mustard and S&P, then, due to being paranoid about not-fully-cooked potatoes, I cooked 20 minutes at 375º and another 15 at 425º. Excellent and turned out even better the next morning as homefries!

Orange Roasted Salmon

Reviewed: Sep. 27, 2009
I don't understand the purpose of roasting the orange/onion slices, other than it made a pretty topping afterwards, but the salmon was delicious. I did alter the order of step 4's directions, pouring the juice mixture first *then* sprinkling the herb mix over it (otherwise the juice would have washed off the herbs). I also heated the honey before whisking it, making it much easier to whisk into the juices. Excellent, delicious, and simple!

Cheddar Green Beans

Reviewed: Jul. 14, 2009
Canned green beans work just as well, by sauteeing your onions and garlic, then adding one can of drained whole cut green beans (layered over the onion and garlic) lowering the heat to simmer and covering for 3-5 minutes, then stirring a few times with the flame slightly higher to ensure thoroughly heated beans. Yum!
