Sesame Shrimp Stir-Fry

This dish was o.k. I'll probably make again for something quick and easy. The only thing that I would change would be to use freshly grated ginger instead of ground to give it more of a ginger-y flavor. I'm usually not a sauteed pepper eater, but the sauce gave these a great flavor (I cooked until soft).

Anniversary Chicken I

I prepared this two nights ago and it was a hit! My six-year old daughter loved it and so did my eighty-nine year old grandmother! I used chives instead of green onions beacuse that was what I has on hand, Next ime I will use green onions--I think the flavor will be fabulous. I used Kraft Three-Cheese Ranch Dressing which gave this dish an awesome flavor. I will definitely make again.

Chicken Enchiladas II

I made this in advance with no problems. The tortillas are not mushy and it held up very well. However, I was not extremely pleased with the taste--but I think that was my fault. Instead of cutting up and seasoning my own chicken breast, I used a box of fully cooked diced chicken (Tyson's, I think). I neglected to season it so when you actually bit into the enchilada, it was a tad bland. The sauce was magnificent and had I seasoned the chicken, the whole meal would have been superb. I will probaly make this again, next time using my own chicken.

Shrimp Linguine

It never fails that after trying a recipe with rave reviews I get my hopes up only to be a little disappointed. This recipe was lacking in something I have yet to put my finger on. It needed generous amounts of salt despite the bacon and the flavor was almost bland. I think that maybe next time the herbs and tomotoes need to be sauteed in the bacon drippings instead of the olive oil--maybe that will add a little more flavor. To give this the benefit of the doubt, I brought the left overs for lunch(maybe it will taste better once the flavors sit overnight). This has the potential to be something great--but with some major tweaking.

Tabbouleh I

Souvlaki

This dish was very tender and flavorful. I used beef instead of pork and it turned out rather well. I let it marinate overnight and the flavors did nto overwhelm the meat. I served this with tzatkiki sauce, saffron rice, pita bread and tabouleh. It was delish!

I prepared this on the 4th of July. I must say that I was a little disappointed after all the rave reviews. It was good, don't get me wrong, just not GREAT. Haven't decided whether or not I will try again.

Crab Rangoon I

These were definitely lacking in something. I kept adding and adding and it tasted good in the mixing bowl--but, once I fried them, the taste was GONE! It tasted NOTHING like any crab rangoons I have ever tasted and I was very disappointed. I was so proud to have made them LOOK exactly like the ones in the restaurants, but it was a waste of time. I stll have these in the freezer and made them two weeks ago.

Chicken Marsala Florentine

I had this for dinner tonight and thought it was ok. I used Marsala cooking wine and found it a little bit vinegar-y. The sundried tomatoes I used were oil packed which I believe made it a little greasy. I had to cook the mixture longer than 10 mins so it could reduce to a consistency I liked. My daughter liked it, so I may prepare again with a few adjustments.

Mexican Lasagna

I was pleased with the overall recipe. I use 'mexican style' stewed tomatoes, added onion to the beef mixture and used Monterey Jack cheese between each layer of tortillas.

Easy Strawberry Lemonade

Should I have pureed the fruit prior to adding it? I used raspberries instead. The idea was o.k., but the texture was not drinkable. I'll try again with pureed fruit.

Gourmet Chicken Pizza

This was absolutely FABULOUS!! I have never eaten a chicken pizza, of any kind, before and this was a wonderful first experience. My five year old daughter absolutely loved it and so did my grandmother who NEVER eats a whole piece of pizza! I loved the combination of flavors. I usually change recipes a little to suite my particular tastes, but I only used a blend of mozzarella and provelone instead of the cheddar. I may never go back to the tomato-ey, greasy, sausage ridden pizzas!

Indian Saffron Rice

I must say that I have never had rice turn out as fluffy and as tender as this! Mine usually sticks together and eventually turns to mush. However, I was very disappointed by the flavor. It could have been because I used Spanish saffron, so I will try Indian next time. I hate to say this, but the Zatarain's yellow rice had more flavor! To save my beautiful fluffy grains, I ended up adding tumeric which REALLY helped alot.

Pan-Fried Asparagus

I prepared these this weekend and they were very tasty, but VERY greasy. The asparagus literally swam in the butter and olive oil. My five year old daughter actually liked them (she has a very sophisticated appetite for someone her age anyway) and so did everyone else. Next time, I will definitely cut back on the fat.

Judy's Strawberry Pretzel Salad

Overall, I was very pleased with this recipe and it was a major hit at my Memorial Day cookout yesterday. I made this and a banana pudding and this won hands down! I, however was a little put off by the top jello layer. Although very good, I think it would be better with a thin layer of lemon curd(personal preference). My five year old daughter absolutely loved it--so this is definitely a keeper.

Jay's Jerk Chicken

Overall, I was very pleased with this recipe. I really liked that the flavor of the marinade did not overpower the chicken. The only disappointment was that after adding a whole jalapeno AND a whole thai chile--It still was not hot enough! Next time I will definitely beef up the pepper. Everyone at the Memorial Day cookout yesterday loved it--is definitely a keeper.

Six Can Chicken Tortilla Soup

I prepared this tonight with some minor adjustments. I added cumim, chile powder, garlic powder and cilantro. It was pretty good, but not at all what I expected after reading the rave reviews. Can't decide whether or not I'll make it again, although this would come in handy in a pinch. Didn't have tortilla chips, but had some flour tortillas which I sprayed with Pam and baked until crisp..which worked out well.
