Fresh Strawberry Pie I

Reviewed: Apr. 9, 2002
This is a good recipie if you adjust it to make only one pie. I agree with the previous reviews that there was not enough glaze to cover both pies. I had to mark it down overall because you shouldn't have to adjust a good recipe in order to make it work. Next time I will make one pie and use only 1 1/2 quarts of strawberries.

Cake Mix Cookies VII

Reviewed: Dec. 22, 2002
I made this recipe just as written (with a yellow cake mix) and was very disappointed. It tasted really bad. It was like an undercooked yellow cake with chocolate chips. It was easy but, that doesn't matter if the end product isn't good. Maybe it was the cake mix I used. I decided to try again with a devil's food cake mix and it was much better.

Carrot Soup 'a la Louise'

Reviewed: May 5, 2004
I made this soup because I had tons of carrots and needed a way to use them up fast. I had never had carrot soup before. I was very suprised that everyone loved it..including two picky toddlers! I prepared the ingredients just as written then I smoothed it out with an emulsion blender and added some crumbled crisp-cooked bacon on the top. I will be making this again. Thanks for the great recipe!

Steak Tip Marinade

Reviewed: May 16, 2004
My whole family loved the steaks I made with this recipe! It really had nice flavor without being over-powering. I have used it on T-bones and Top Sirloin. I didn't have a garlic/pepper blend so I used a few good shakes of regular black pepper and a dash of garlic powder. I also used Bullseye BBQ sauce (unlike a previous review using Bullseye, I didn't find it too sweet. Maybe it was the dressing that was used?) Thank you for an easy to make great-tasting marinade!

Hashbrown Casserole

Reviewed: May 17, 2004
This recipe is a keeper! I always use a large shallow baking dish and cut the sour cream to 1/2 c. and instead of putting the 2 T butter in the dish along with the soup mix..I melt it first and stir in the corn flakes before putting them on top. (It helps the topping stay crunchy) This is a great recipe to add some ingredients to and make it your own. I've exchanged 1 can cream of mushroom, cream of potato or celery for one cream of chicken, used a real onion, added a few dashes of tabasco sauce or 1/2 t. cajun seasoning (it really wakes up the flavor) and also added 2 rashers crumbled bacon. Louise, thanks for sharing this wonderfully creamy side dish!

Chicken a la King I

Reviewed: May 17, 2004
This is a great recipe! I use it often and it always turns out. I have toddlers who don't like to eat protein because of the texture and I've found that they love this when I will exchange the chicken breats for 1 or 2 (13oz) cans of chicken. (It is more like shredded chicken). Thanks for a wonderfully quick and easy meal Colleen!

Authentic Mexican Tortillas

Reviewed: May 17, 2004
This is the third time I've tried to make tortillas..which I know now is an art. This was the best dough that I have tried. I used almost boiling water and it did make the dough soft and pliable. In past attempts with other recipes the dough was crumbly and hard to work with. The cooking of tortillas is tricky. I think it's just hard to know how hot to cook in order to heat the outside but still still leave them soft enough to roll into a burrito. Although my tortillas were not all round and some had darker spots than I would have liked, they did taste good. This recipe gives me some hope. I'll keep trying.

Basic Ham and Bean Soup

Reviewed: Jun. 10, 2004
Great flavorful recipe! I used a mixed bag of beans (15 bean mix) that I had on hand, along with remaining meat and bone from a honey baked ham and then followed the recipe exactly. Tasty stuff! The whole family enjoyed it. It was much better than my regular tomato-based 15 bean soup recipe. I'm looking forward to trying it with just the great northerns in the future, but it's good to know that adaptations also turn out wonderfully. Thanks for the recipe!

Round Steak and Gravy II

Reviewed: Jul. 16, 2004
This looked like a great recipe as written...but I did change it a bit in order to make it fit my schedule and ingredients that I had on hand. I had 2 1/2 lbs round steak and used a packet of lipton onion soup mix instead of the can of onion soup and about 2 cups water and a small can of mushrooms. Since I was going to be gone most of the day and needed it ready for dinner, I decided to cook it in the crock pot for 2 hours on high and 6 on low. When I got home the aroma was wonderful! The meat was fall-apart tender, moist and delicious. I served it with mashed potatoes and had plenty of the soup mixture to use as gravy. Thanks for a "souper" easy and great tasting recipe!

Quick and Easy Alfredo Sauce

Reviewed: Jul. 16, 2004
I was expecting a good alfredo sauce with this recipe after reading all of the reviews, but my family did not like it at all. I followed the recipe exactly and cream cheese dominated the flavor. It tasted more like a cream sauce than an alfredo sauce. It also made a lot of sauce..too much for 4 people. While it was a nice consistency, it was really lacking in flavor.

Pizza Dough II

Reviewed: Aug. 7, 2004
This dough is wonderful! I have made it twice and it has been delightfully easy to work with. I have made pizzas and calzones. Both were yummy. I used my baking stone and the crust bottom was crispy with the inside soft and chewy. Great texture. Thanks for the recipe Stephen! My kids think that "Mom's Pizza" is better than delivery!

French Bread Rolls to Die For

Reviewed: Oct. 6, 2004
My family loves this french bread! I use a stand mixer and a baking stone. The crust is crisp and the inside is soft and chewy. I do recommend using the egg wash..it makes the bread look wonderful. I have made it into rolls and even used it to make a ham and cheese bread braid. My husband was so impressed! Thanks so much for this fool-proof recipe!

Pineapple Upside-Down Cake VII

Reviewed: Oct. 6, 2004
This is an easy recipe! I have used both white and yellow cake mixes, pineapple rings and tidbits. They all work wonderfully. I recommend using at least a 10 inch or larger cast iron skillet or you will be left with extra cake mix or have a spill problem in your oven. It did need to be cooked longer than the box stated as well. Hubby loves pineapple and I love easy...so this has gone into rotation at my house!

Nana's Acorn Squash

Reviewed: Nov. 3, 2004
Yummy! Even my husband who doesn't like any kind of squash raved over this! He said it was the best squash dish that he'd ever had. Using the microwave made the squash soft and moist. Thanks for the wonderfully sweet and satisfying recipe!

Salmon with Brown Sugar and Bourbon Glaze

Reviewed: Nov. 15, 2004
I sized this down for 2. It didn't really work. My salmon steaks were very thick and required a longer cooking time. I did cook the fish on med-to-med-low but I think that the sugar carmelized too much because of the longer cooking time. The sauce turned into a goopy total loss. I did like the taste of the fish itself but I had to pry it from the pan. It was far from pretty. Will try again for 4 steaks and see if it I get better results.

Southern Candied Sweet Potatoes

Reviewed: Dec. 2, 2004
I made these on Thanksgiving. Since the majority of my family are not fond of sweet potatoes, I scaled the recipe down to 4 servings. I thought that they were pretty good. My kids wouldn't touch them...but they are picky. They were very easy to make.

Instant Pistachio Salad

Reviewed: Jan. 11, 2005
I remember having this yummy salad as a small child at a church function. I'm so glad that I came across this recipe! Anything that is this quick to put together and devoured by my two kids is a winner in my book! They have already asked me to make it again. Thanks Margit!

Brown Family's Favorite Pumpkin Pie

Reviewed: Feb. 24, 2005
I made the Brown Family's Pie along with my usual pumpkin pie recipe (on the back of the Libby Pumpkin can) on Thanksgiving for my very large extended family. Brown's pie was quite a bit lighter and fluffier and with the walnut top it looked absolutely beautiful. Some liked the airy texture but other pumpkin-pie-purists didn't. I thought that the topping was excellent! It may not be the pie to please everyone, but it was very good.

Slow Cooker Mashed Potatoes

Reviewed: Feb. 24, 2005
Made this for a family get-together. It was a huge hit! I loved that I was able to do the work before hand so I could enjoy the party. That alone gives it 5 stars in my book! It may not be the healthiest side dish...but it is pretty-darn tasty.

Pork Steaks

Reviewed: Feb. 24, 2005
These were barely edible. It was the first time I've ever made a pork steak. I don't know if it was the cut of meat I got from the butcher or if I just don't care for pork steaks. It may not have been the recipe itself. I may try this with chops and see how that goes.
