Chicken Marsala

This was my first try at Chicken Marsala. We did add onion, garlic and a little cream. Served over pasta. Family liked it but thought it could use a bright note. Half a fresh lemon squeezed on top brightened it up a bit. I think next time I will try without the cream, add some chicken broth and reduce it longer before adding the chicken back to the pan.. Hubby said it was a pretty good first try.

Raspberry Buttermilk Muffins

Followed the original recipe and my family thought that the muffins were bland and not sweet enough. I had to make a glaze to go on top to try and sweeten them up a bit but the texture was still off. It was a little tough. If you like your muffins on the drier side and less sweet then you may like these, but we won't make them again without changes.

Ice Cream Baked Potatoes

I made this for my kids for an April Fools Day Dinner Fake Out. I scooped the ice cream onto plastic wrap. Rolled the plastic up to fit the ice cream and squished it to form the potato. I put a valley in the middle of the potato and froze it until hard. Unwrapped the plastic and rolled ice cream in a bowl of Hershey's cocoa and some cinnamon sugar. Melted a couple tablespoons of marshmallow fluff and a few drops yellow food coloring in the microwave and stirred it all together for the "butter". Filled in the potato valley with canned whipped cream and topped it with the melty marshmallow fluff. Kids loved it!

Quinoa and Black Beans

This was my family's first quinoa dish and they really liked it. After reading some reviews I rinsed the quinoa really well, only used one can of black beans, used chicken broth instead of veggie, and canned corn instead of frozen. I added some chopped green chiles and one diced tomato. Nice that the recipe is flexible. Served with chicken tacos. Will definitely make again.

Apple-Raisin French Toast Casserole

We swapped out raisins for cranberries. It had a good flavor but it was a little wet and custard like for my family's tastes. They liked the crispy top of the bread but the part just over the fruit was a bit soggy. I baked it for longer than it said to but it didn't help. They asked me to make my regular French toast next time but cook the apple cranberry mix on the stove and pour it on top. So at least they liked the flavor if not the texture.

Apple Cake IV

Loved this cake! Tried others on this site that were too soggy. This one had a nice moist texture. The only thing I changed was cut back by 1/4 c on the sugar since my apples were pretty sweet. We served it with a scoop of vanilla ice cream! Yum!

French Apple Bread Pudding

I've never made a bread pudding before. I had a can of condensed milk and some gala apples on hand so I tried this one. It was easy and tasted good. The only thing I changed was I used a cinamon swirl bread.

Greek Chicken

I followed the recipe for the marinade using the fresh herbs. Marinaded cut-up chicken tenderloins and then made into kabobs. I grilled the chicken kabobs along with pepper and onion kabobs and served with grilled flat bread. I'll put it in rotation. Easy to make & yummy!

Lemon Raspberry Jumbo Muffins

Yum! Super simple and good! I used what I had on hand. No heavy cream so I used whole milk, no frozen raspberries so I used fresh. My raspberries were a little tart but the muffins had a nice texture and were very good! They rose beautifully. I put sliced almonds on top before baking. Can't wait to try this recipe with blueberries!

German Pancake

I really liked this. We made it in an extra large cast iron skillet. It puffed up beautifully. We sprinkled with powdered sugar and topped it off with cinnimon apple slices cooked in a simple syrup. My kids, who have never had a german pancake before, thought it was too eggy for their tastes. I'd make it again though.

Onion Rice

This was a surprise to me. I was all out of broth. Since we were having it with beef I used 2 c of water and 2t. Better than Bullion beef and followed the rest of the recipe. It was really good! The kids asked for seconds! Woo-hoo! I'll put it into rotation at our house. Thanks

Sour Cream Pound Cake

This was a really good cake. The only change I made was to add 1t vanilla as many had suggested. Instead of baking in a loaf pan I spread it in a jelly roll/ barpan and baked it. Same temp. I just watched it cook until it looked done. Then I sliced it into squares and served little layers of cake, mixed berries, sauce and whipped cream. Yummy!

Easy Never Forgotten Guacamole

I was a little uncertain about using cream cheese in a guacamole recipe, but it was wonderful! The cream cheese didn't overpower the avacado flavor instead it just made the texture a little more creamy. Like other reviewers I also decided to add a touch of cumin and some chopped tomatoes. Everyone loved it! This recipe will go into our family favorites file!

Real Sopapillas

My family loved this recipe! It was very easy to do. I used a stand mixer and a dough hook and mixed it until I had a nice soft dough. I separated the dough into little balls. Then I rolled each ball out really thin before frying in a large deep stainless steel electric skillet set to 360-65 degrees. They puffed beautifully. We smothered the tops in honey butter and ate them warm. Yum! It made a lot. Next time I'll save half the dough in the refrigerator for later.

Marshmallow Popcorn Balls

Zebra Cake

Loved it! My kids wanted to make their own dessert for a family party. Needless to say I needed something easy because they are still quite young. This was it! We put it in a glass loaf pan so we could slice it and see all the layers. I was surprised at how good it was for the amount of effort and they were so proud of themselves when people complimented on how good their dessert was. And I agree that it doesn't need the chocolate chips. Thanks!

Funnel Cakes I

It took a while to get the hang of getting the funnel cakes to look right. I ended up using a large pastry bag and it worked better than the funnel. They tasted good and the kids loved dusting them with powdered sugar. Would make again.

Baked Apricot Chicken

First I have to say that this recipe was a starting point for me as I didn't have any of the ingredients needed for the complete recipe. I played with what I had and boy was I surprised by the wonderful result! I didn't have any salad dressing so I left it out. I didn't have onion soup mix so I found a copy cat recipe on the web. 4 t. beef bouillon granules, 8 t.dried onion flakes, 1 t.onion powder, and 1/4 t. seasoned pepper. Made a lot so I only used 1/2. I had halved frozen apricots from a tree that went crazy and produced more fruit than I knew what to do with. I made a syrup with them with 2 c. of apricots and 2 c. sugar, 1 c. of water and 1/4 c. pinapple juice and cooked it until it was a bubbling mush. I then ran it through the blender and a fine strainer. It was a thick beautiful jelly sauce! I added 1/2 of the soup mix recipe to it. I only had chicken breasts so I sauted them a little in butter before baking in the oven. To each chicken breast I ladled the onion-apricot sauce and topped it off with a pinapple ring and baked until done. Wow it tasted great! The kids and hubby asked for seconds. (for meat that is unheard of for my kids!) Thanks for the great idea of using apricots and chicken!
