Puerto Rican Shredded Pork

I also did not sear the meat, just trimmed all the fat off. Used orange juice instead of fresh oranges. Made this for burritos and my very picky eaters, 6 & 7 y/o, loved it! They even wanted leftovers for breakfast the next day.

Tender Italian Baked Chicken

4 stars for easy prep and chicken was moist. Didn't have a wire rack, so just put the mayo, cheese, bread crumbs on top of the breasts. They browned up nicely, but the topping was so dry. I may try this again, mixing the mayo, cheese, bread crumbs together.

Baked Onion Dip I

I make this with shredded cheddar. It's fabulous. Always a hit at a party.I dice the onions into small peices and I don't spray the pan. As for being "oily", I think that's what keeps it nice and smooth even after 2 hours out of the oven, if it lasts that long!

Lentil Soup

Made a few changes. Added cumin, left out basil. More garlic, 4 cups (one carton) vegetable broth and 2 cups water. I love vinegar, but didn't think it added much to the flavor. Great lentil soup!

Escarole and Beans

Very tasty, but a lot of work! Took 20 minutes just to rinse all the grit out 2 heads. Tore into pieces rather than cut it up, discarding the white stems. As per others, used one can of beans and lots more garlic and garlic powder. Also added 1/2 cup chicken stock and a teaspoon of apple cider vinegar, as it need a bit of acid. Makes enough for about 4 side servings.

Baked Soy Lemon Chops

Followed the recipe, tasted the marinade before I put the pork chops in. Kind of bland. Added Mrs. Dash lemon pepper. Marinated for 8 hours. Chops did come out moist, but still kind of bland.

Shrimp Quesadillas

Made this with chicken, since shrimp is so expensive here in New England. Used a little more cumin and chili powder. Folded the tortillas in half and put them in the oven at 450 for about 5 minutes, until they were crispy and cheese was melted. Very good and very inexpensive, since peppers are in season. Nice heat from the jalapeno. Served with fresh corn on the cob. Easy and yummy meal.

Chicken Andouille Gumbo

This is pretty authentic. I suggest that you omit the thyme and basil, saute a whole onion with the pepper and the celery. Add a good 2 tbls of worcestershire. You cannot make a roux in 6 minutes. 1/2 hour minimum. Going to try the roux oven method as another reader suggested. It's hard to get andouille here, so I use keilbasa and a pinch of cayenne.

Milk Braised Pork Loin

Followed the recipe closely, used half the salt listed and a boneless pork loin roast (not a tenderloin). Pork was not very tender. The brown buttery kernels were quite yummy. Not sure if I would try this again.

Beef Bourguignon II

Four stars after much tweaking of the recipe. I used a top round london broil cut into 1" cubes. Browned the meat in oil with out flour. Deglazed the pan with wine. Cooked one large onion in oil and a little butter. Degalzed again. Browned 1 lb. fresh mushrooms in 2 tbl butter, then added 5 cloves minced garlic. Cooked 2 minutes. Put meat and onions back in the pan. 2 cups red wine, 1 cup beef broth, bay leaf, pepper, 8 oz. baby carrots, 2 tbl tomato paste and a slurry of flour with a little water. Covered pan and put in the oven. Tasted after an hour. Added 1 tsp beef base (Better Than Boullion). An hour later I added 1 cup minced parsley. Half an hour later it was done. It came out delish. I would add frozen pearled onions next time. Not canned!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

I thought this was good, but not really fantastic. I cook for a family with 3 kids. I would have given this 3 stars, but the some what picky 4 y/o said this was the most wonderful thing he ever had in his mouth! I changed a few things. Added frozen corn (kids like corn), used a crock pot after browning meat/onions, inreased the chili/cumin. In the last 30 minutes of cooking, I threw in cilantro and the juice of one lime. Poured it into a casserole, topped it with cheddar cheese, baked until cheese melted. I will make this for the family again.
