Homeschooling mom with a hunger for healthy delicious "do-it-yourself" dining! Born in Ohio, raised in Wisconsin and living in Georgia with my Jamaican husband and four children (ages 2,5,6 and 8). I have many reasons to alter recipes including a disease that I was greeted with in college and just loving to try to make mysterious foods irresitably delicious! My family is forever subject to my experiments. Although I enjoy meats, fish and dairy, it is so fun to tweak my recipes making them vegan and gluten free. I beleive God made this amazing world for us to taste and our options are unlimited! I also beleive that no matter your food allergies or preferences you can "medicate" your diet to cure your body and keep it healthy.....COMPLETELY!

My favorite things to cook
I enjoy kale dishes both raw and cooked. Red snapper and Corvina fish. Also, enjoy making "dry" (chicken breast and turkey) meats soft, flavorful and juicy! I love love love "vegetating" baked goods like cake, muffins, breads and cupcakes with cabbage, carrots, cauliflower and other unwanted veggies. I love to see my children enjoy vegetables and other health food so much that it's like a dessert to them. Groothies is what we call our smoothies because they are usually green! I like to experiment with many different ethnic foods including Indian, Mediterranean, Thai, Ethiopian and many others.
My favorite family cooking traditions
I would love to copy traditions of Big Ma, my grandmother but she took those with her when she passed in 2008. Most of the traditions are altered because we can afford to eat better foods.
I don't repeat dishes much but I try at my husband's request. So, I guess my tradition would be fresh and cooked from scratch.
My cooking triumphs
Bread with yeast! I used to be soooooo intimidated by yeast bread but thank to allrecipes Amish bread! That was my first yeast bread that was successful!
Other triumphs were getting my children and husband to enjoy bean and kale dishes! The key is to make broth super flavorful for the beans and make sure to counter the bitterness of the kale.
Making Biryani chicken and Vaca Frita!
Finally making chocolate cake with 2 cups of raw beets without the pickiest knowing the difference!

My cooking tragedies
Gluten free breakfast bread in the bread machine...what a wasted of ingredients. Trying to "brine" a 3 pound red snapper! Yeah, I know now that you don't BRINE fish.....it's called salted. I was able to salvage it with a fish chowder....thanks again to Allrecipes.com!
