Zucchini Cobbler

I was reluctant to make this for a potluck until I had used my family as guinea pigs first. I made a small batch with my usual "Crisp" topping and everyone, including my picky 9 year old were fooled! My husband was even confused as to why I was having him taste "my usual" apple crisp :) The only changes I made were using the large "8 Ball" squash from my garden instead of long zucchini. If your filling is bitter that's a problem with your zucchini, not the recipe...I also cooked it longer with the sugar and spices and a little pat of butter. My topping is:1 1/4 c. oats, 1c. flour, 1/2 c. wheat germ, 1/3 c. nuts, 1 c. brown sugar, 3/4 c butter, 2 tsp. cinnamon, 1/4 tsp nutmeg & salt. I press half in the bottom of the pan and sprinkle the rest on top. Oh yeah! 8-9 c. fruit filling in the center! :)

Blueberry Zucchini Bread

I made it into a coffee cake to take to a potluck.I made 1 1/2 times the posted amount.It made enough for 13x9 glass pan and a little loaf pan.I baked at 325 for about 1 1/4 hour.I made many of the same changes that other posters made~whole wheat pastry flour,1/2 applesauce for oil (used unsweetened,apple-blueberry),brown sugar for white and only 2 1/4 cups in all(plenty sweet for me,even w/out crumb topping),a little more zucchini~3 1/2 c. in all,a little more baking soda(for the extra acidity in brown sugar) and a crumb topping with 3/4 c. each brown sugar and flour and 6 Tb.butter cut in.Several people asked me to write down the recipe for them! It really was excellent!

Old Fashioned Onion Rings

These were great!We used it on onion,zucchini and small mushrooms.They were all excellent!A bonus was that the first batches stayed nice and crispy in a warm oven while we fried consecutive batches in our tiny deep fryer.A hit with the whole family!

German Rouladen

Wow!This went over better than I expected!It was very different and exciting for those of us who grew up with the Italian side of the family and never got to experience the German side! :) The whole family loved it~especially my 7 year old daughter,who I was the most skeptical about. I served it with the Crispy Potato Pancakes from this site.They were both great with the gravy.I added the Worchestershire and peppercorns that someone suggested and it was a very good addition.They all asked me to make it again!

Tofu and Veggies in Peanut Sauce

This was a very good start and with some additions and changes has become a staple. I added about 2 tsp each fresh,minced ginger and curry powder,a clove of garlic minced and a couple Tb of minced onion.I used about twice the soy sauce and brown sugar(which I used instead of the molasses),and a little less of the rice vinegar.

Roasted Brussels Sprouts

OH MY GOSH!!If I could give them 20 stars I would!I have to admit that I was put off a bit by the thought of eating black brussels sprouts,but made them anyway because of all of the great reviews.I just took them out of the oven and had to try one.I didn't think that anything so simple could be SO delicious!I will never steam brussels sprouts again!

Caramelized Onion and Gorgonzola Pizza

I have had and made a very similar recipe which I like better AND is easier.It uses a Boboli crust,carmelized red onions(I've never needed the sugar),about half the cheese,then is sprinkled with toasted walnuts,drizzled w/olive oil and baked according to the crust instructions.I've never had leftovers!

Firecracker Grilled Alaska Salmon

OH YUM!!I've been trying lots of salmon recipes lately~trying to work more fish into our diet.This is by far my favorite!I only did some minor tweeking.I lowered the peanut oil by half,raised the soy sauce and vinegar to 6 Tbs,and the ginger and red pepperflakes to 1 Tbs.This was so impressive,I will make it for company.I will definitely be making this a lot!!

Carrot Rice

What a nice change from the normal rice pilaf!I made it just as the recipe said,just using my lemon zester to grate the carrot as another reviewer did,and it was delicious!Will definitely be making this one again!

Heavenly Potatoes and Ham

This was sooo good!My husband said over and over how much he liked it!I followed some of the previous advice and used about 3 lbs. of potatoes and twice the ham.For the sake of calorie watching I left out the butter,used half the cheese(which was low-fat mozzerella)and sour cream(which was non fat),and only used half the crumb mixture.None of these changes were detrimental to the feel of the dish,but make a big impact calorie-wise.I also used Cambell's cream of mushroon with roasted garlic soup instead of the cr.of chicken.I'm really glad the I didn't cut the recipe in half like I had originally planned,because now we have leftovers!

Taco Cornbread Pizza

My whole family enjoyed this!I lightened it up by only using half the meat(and that was ground turkey breast)and light cheese.I also used some leftover green enchilada sauce as pizza sauce and tossed some sliced black olives on.I'm looking forward to making this again and fooling around with the toppings some more!

Szechuan Spicy Eggplant

This was very good.I used about a pound of very firm tofu,pressed and marinated for about half an hour,instead of the meats.It worked nicely.Also,I din't have any oyster sauce left,so I didn't use that.It was about salty enough for my taste,i probably could have added a couple more Tbs. soy sauce.Over all very tasty.

Chicken and Bacon Shish Kabobs

These are sooo good!I think I've made them about five times now!They are my husbands favorite recipe.Everyone who has had them raves about them!They're best when made with a good smoked bacon from the grocier's deli.

Wrapped Salmon

This was a nice recipe.Simple and pretty easy(if you're used to working with filo).My kids even liked it.Next time I will experiment with adding some herbs between the filo layers and maybe a more exciting sauce for a change.It was good as is though.

Coconut Curry Tofu

Very good!Very tasty!Next time I think I will add a couple Tbs cornstarch,as it was pretty liquidy.My husband liked it this way though.He said I should serve it with less rice and with a spoon next time.This will definitely be a regular!

Caribbean Sweet Potato Salad

Come on people!Doesn't anybody taste the dishes they make before they serve them?!I'm so tired of people giving a recipe a bad review because it didn't have enough flavor,salt,spice etc.Adding more flavor is about the easiest change you can make to a recipe.Make it,taste it,if it needs something more for your taste,add it!Everyone's taste is different~think for yourselves!Don't blindly follow a recipe that was made to a different persons idea of flavorful! That said~this was a great start and a great recipe once I personalized the flavor level.I added more lime,mustard,garlic,salt and pepper,and used 1Tbs veg. oil and 1Tbs peanut oil.I also used Yukon Gold potatoes because I like their texture more than Russet's.Great looking,great tasting,great texture! Enough said!

Chicken Salad with Couscous

Very good quick recipe!It ended up being even quicker,since I used 4 leftover grilled chicken breasts.I also added a couple heads of lightly steamed broccoli and made a dressing of 1 1/2 Tbs lime juice,about 6 Tbs orange juice,2 cloves garlic,salt and pepper and tossed it in.I also cooked the couscous in 1 1/2 c. broth instead of 2.

Angel Biscuits I

WOW!These are the biscuits I've been looking for all my life!I made a batch with whole wheat pastry flour and a little less shortening and they were still delicious!I used these to make dumplings for chicken and dumplings and,with a little sugar and cinnamon sprinkled on top,the top of a peach cobbler.Both variations were great!I will never use another biscuit recipe again!

Bacon Chicken and Dumplings

What a great recipe!i cut it in half and it made plenty for my husband and I and our two kids(who actually ate and enjoyed it!)I used fat free half and half and two zucchinis,intead of corn.Also,I didn't have biscuit mix so I made a small batch from scratch.This was a tasty,nice meal that we all enjoyed.I will definitely be making this again!

Cheater's Enchiladas

These were every bit as deicious as the enchiladas that I slave over for hours!I used lowfat sourcream and chopped a lone pork chop from a large pack into bits and cooked it in the enchilada sauce.I will definitely be usng this one again!
