Tres Leches (Milk Cake)

This was the first time I made this cake, my son wanted me to try it so I did. I always read reviews to see what others have done to modify the original recipe.. I did follow one reviewers suggestion on cutting down the sugar and whole milk.. We don’t drink whole milk so I used 1% and only 1 cup of it. For the topping I didn’t bother with the original recipe… what I did do was use 1- 8oz cream cheese, 1 cup of confectioners’ sugar, 1- 12 oz container of cool whip.. I creamed together the cream cheese and powdered sugar till light and fluffy then I added the thawed out whipped topping and mixed them till I had the thick consistency I wanted. When I made the holes in the cake I found it easier to use a straw, some of the cake will be inside the straw but I just pushed it out. Once I mixed the “ tres leches” instead of just pouring it into the holes I filled a bottle with a tip and just inserted the tip into the hole and filled it in.. It was so much faster that way especially since I used a bunt cake pan instead of a 9x13 pan.. This recipe is a keeper… Thanks for sharing…………

Bacon Cheese Frittata

This is great.......... I was making omlets in the morning for my son before school, now all he has to do is heat them up and he's good to go!! I baked them in a cup cake pan which makes it really easy to just grab n go......... I added some spinach and mushrooms just to get more veggies in him and he really enjoyed them. Thanks for sharing this awesome recipe!

Flourless Chocolate Cake II

This was really easy and quick, BUT way tooooo rich and the family didn't like it, I can't knock it for it's taste but it's just too sweet for us. I wont be making it again..

Chocolate Chocolate Chip Cookies I

These are the best, after reading a few reviews I did make some changes, first split the sugar, instead of all white I did 3/4 c brown, 3/4 white, next I did 1/2 & 1/2 of butter and shortening, and used 1 c milk chocolate chips, 1 c white chocolate chips, once done, I used a med size scoop to form the cookies and put them on the cookie sheet, i chilled the whole pan and dough for about 1 hr while doing other things, then I baked them in the oven, they did not flatten out like some other people mentioned, it helps chilling the dough prior to baking. I'll be making these next christmas.. I only bake once a year and I go nuts when I do, these will be on the Christmas list for years to come. Thanks for sharing. Happy Baking!

Chile Rellenos

This was the best and easiest recipe for rellenos, I tweaked it just a little and instead of going thru the hassle of cutting the cheese, I used string cheese, the combo stick with cheddar and mozzarella cheese, I sliced it in ½ (long way) and with that, I was able to get 2 rellenos out of one stick, it fries nicely and it doesn’t splatter like some cheeses do.. I made a tomato gravy type sauce to pour over the rellenos, that calls for one can of diced tomato with juice, 3 finely chopped celery sticks, ½ cup finely chopped onions, 2 finely chopped fresh jalapenos (remove seeds and membrane) and handful of chopped cilantro, sauté celery, onions, and jalapenos till soft, let cool and pour into blender, add the can of diced tomatoes, cilantro and blend till smooth, season with garlic salt and pepper to taste, Just pour the amount you want over the rellenos,

Dog Treats I

Buster & Maggie went nuts when they ate the first cookie, I did omit the cheese and cornmeal and added one cup of peanut butter, that's probably the reason Buster was hanging out in the kitchen till they were done.. I poked a hole using a straw in about 6 cookies to hang on the Christmas tree, probably not a real good idea but they are part of the family.. I even made a couple of treat bags for my friends pups as well.. thanks for sharing

Oatmeal Raisin Cookies IX

the only changes i did to this wonderful recipe was omit the raisins and added craisins & broken chuncks of hersheys chocolate bars, and threw in one extra tsp of vanilla extract.. they came out awesome and everyone loved them....

Marinated Grilled Shrimp

This was an awesome and easy recipe, I did modify it according to one review. Rather than using tomato sauce i used diced tomatos and added the sweet chile sauce, it turned out great! Next time I'll double the amount of shrimp, they were gone in no time...... thanks for sharing

Baked Honey Mustard Chicken

Fried Rice II

Next time I'll use the rice it called for, i used jasmine rice and it was just too sticky, i did split up the oil by using sesame and veggie, it gave it a real good flavor. I skipped the sprouts and used other veggies i had on hand, thanks for sharing

Baked Orange Roughy Italian-Style

I was very good, but for some reason the Roughy had a very fishy taste to it, i think the next time I’ll use sword or halibut, our favorite is Tilapia so that’ll be on the list for next time. The only thing I did different was broil the fish for the last 2-3 minutes to give it a crispy topping, I’ll definitely use this recipe again, I just wont use the Orange Roughy...

Chocolate Pound Cake III

Wonderful cake,I used my pampered chef bundt stoneware , it took a little longer than the 70 minutes, i had to bake it for another 8 minutes due to the stoneware. Came out fantastic... I decorated it with white chocolate covered strawberries and powdered sugar. Stored in fridge overnight and served it the next day, some reviewers stated it tasted better the next day and it did. thanks for sharing

Coconut Poke Cake

This was a very moist and delicious cake, it did taste like the Tres Leches cake my brother makes, I love the taste of toasted coconut, so I toasted the coconut flakes and sprinkled them on the cake, it was a hit with the family..

Made this for our party and it was a hit, people couldnt believe it contained beer, i did use 7up instead of water as suggested by others, this is a keeper and much much better than the "store bought" thanks for sharing

Famous Butter Chicken

I’ve always had trouble with dried baked chicken, this recipe solved that problem, I like to experiment with recipes to see what works and what doesn’t, while I was crushing the crackers I soaked the pierced chicken in the beaten egg, then added coconut flakes to the cracker crumbs, I know it sounds wired but it came out really good.. It was semi sweet with a buttery flavor, everyone loved them and the chicken came out really moist, I baked them for about 25 min. covered then broiled them for about 3 minutes uncovered to toast the coconut.. Fabulous.. This is a keeper.. Thanks for sharing
