Zucchini 'Noodles'
If you have a "Y" peeler, you can make this by pressing a little harder on the zucchini and making thin ribbons. Then you don't need to boil them, just saute them in a pan for about 1 minute. Add a tablespoon of pesto and you'll think you died and went to heaven. FYI, both zucchini ribbons and zucchini noodles can be frozen easily and thawed quickly.

Zucchini Brownies
Have faith! You don't need the egg. You don't need to add more liquid. The liquid is all there, it's just hiding in the zucchini. The batter will appear to be dry, but it's not. Try following the recipe as written the first time. We loved these. They freeze well, if there are any left around that might be frozen.

Three Animal Italian Meatballs
If you go with 1 cup of oats and drop the bread crumbs, these are gluten free! You'll need to add some additional Italian Seasoning to make up for the seasoning in the bread crumbs. I make these all the time for my family and no one knows the difference - but my gluten free daughter can eat them with us! A real favorite.
