Garlic Chicken Fried Brown Rice
Found this recipe yesterday after making a big batch of brown rice and wondering what to do with all the leftover rice. I made it exactly as directed, but with the addition of chopped water chestnuts. I agree with other reviewers that the peas really make it awesome. It's really tasty. Definitely a keeper -- I did add a little extra soy sauce to my bowl, but that's entirely based on my tastes. Yummy!!!

Quick Chicken Piccata
I just made this recipe today and it's quite possibly my favorite quick-prep-eat meal ever! Great taste, easy to prepare, and cooks quickly. The key really is to flatten out the chicken breasts. They cook evenly and quickly. I wouldn't change a thing. I did add artichokes from a can but that's not necessary. One note--when I first added the liquid I thought that it was too much, and not thick enough. I let it cook down and sure enough, it turned into a very nice pan sauce that had thickened as it cooked down. I added the butter right at the end and that made it even better. Don't skip the butter. It's not much considering the overall portion/quantity the recipe makes. Can't wait to make this one again and again. It's so easy you won't need the recipe next time you make it.

Grandmother's Buttermilk Cornbread
Excellent! I made a double batch, baked it in a greased 9 x 13 inch pan, and it was done in 30 minutes. Any longer and it would have been overdone. I'm freezing part of it so I hope it freezes as well as the author suggests it will. This one's a keeper, as written.
