Meatloaf Stuffing

This was excellent and the family loved it. Didn't have apples so skipped it. We don't care for the traditional meatloaf but this was easy and tasty. Will rotate into our menu. Thank you for sharing your recipe.

Minestrone Soup II

What a great soup on a cold winter evening. I put the tomatoes, zucchini and added half of an anahiem peper into a food processor and put that into the soup. It's the only way to get my kids to eat the zucchini or and tomatos. I don't care for garbanzo beans so I put in a can of white beans (drained) and a can of white Kidney beans (drained). I also put in italian sausage instead of ground beef. I will absolutely make this again.

Apple Crisp II

This was so tasty. The whole family loved it. I followed the instructions as written. Next time I will try only half the water and half the white sugar. I wouldn't double the topping as I had plenty to cover a 9x13 dish. We served with vanilla ice cream or whipped cream. I like cranberries (dried, fresh or frozen) in my Crisp just for an added tartness.

Balsamic Roasted Pork Loin

Best pork loin we have ever had. Kids and husband loved it. I too seared it first before putting it in the oven. I pulled it out when the temp reached 155 degrees and let it sit for 10 minutes before cutting into it. As other reviewers mentioned I believe it also depends on the type of balsamic you use. The one I used for this recipe is sweet. I don't know if I would have liked a tart one as much.

Lemony Quinoa

First time making and serving Quinoa. We loved this. It was so fresh tasting with the lemon and celery. We served it with salmon and it was so satisfying. We will serve this again.
