Sauceless Garden Lasagna

Excellent, with modifications for what I had on hand. Used low-fat mozzarella cheese, low-fat cottage cheese mixed with an egg, instead of feta. Shredded the zucchini. Didn't have spinach or mushrooms (wish I did) so used finely shredded carrots, celery and finely chopped green peppers. Added dry spices: Italian oregano herbs, basil and then topped dish with thinly sliced green onions & Parmesan cheese. Yummy and satisfying.

Slow-Cooker Pork and Apple Curry

This is definitely a saver. Cooked on HIGH 4.5hrs. Added 1/3c golden raisins to recipe. Used jar garlic & ginger, doubled amount to my liking. Added 1/8c jar chopped hot green chili & 1Tb dried red chili flakes. Used apple juice instead of orange juice, + 1tsp lemon Juice to keep apples from turning brown. Added 2Tb Mandarin HOT curry powder and a full liquid packet of commercially prepared HOT curry sauce [also found in a block form] (buy in Asian markets, Sunflower and Whole Foods). Used a very large pork loin cut up. Added 1/3 cup coconut milk mixed with 2T flour to thicken last 30 min. of cooking time. Served over rustic-style long-grain rice. Topped with sliced raw green onions, dark raisins and coarsely chopped salted cashews (didn't have any peanuts). Looking forward to tomorrow's leftovers. Curry is even better the second day.

Oatmeal Chip Cookies

Oh my, these REALLY are 5 star, A+ cookies! My young-adult daughter, who doesn't usually care for oatmeal cookies, went back for 3rds. We added a little extra flour for high altitude & cooked 10-11 min. Used instant oatmeal. Don't Pam spray the cookie sheet (they will spread out too much). These bake up super nice like the picture ... starting with the very first tray out of the oven. I would like to see if they freeze well, but doubt we'll have any leftovers to freeze.

Stuffed Jalapeno Firecrackers

OK, rule of thumb, the smaller the Jalapeno, the hotter it is. Use gloves to seed the peppers, else you get the oils on your hands and hurt for some time. I cut strips of bacon in half before wrapping. I sprinkled onion and garlic powder and dried cilantro over the cream cheese before wrapping. Did this in a toaster over on broil.

Angela's Oriental Chicken Noodle Soup

Doubled recipe and fed 3 adults. Altered recipe as follows: in 4c chicken broth, boiled thinly sliced baby carrots & 1 can drained sliced mushrooms for 3-5 min. Then added 2 thinly sliced green onions (including green parts), 2 pkg broken up Ramen Noodles, only 1 flavor pkt from the noodles & 2c fresh baby spinach. Cooked 3 minutes longer. If I had it on hand, I would have added chicken as well. Served alongside sandwiches.

Summer Squash Casserole with Nuts

A+ with modifications, truly not the same recipe though...:) On Sundays I toss together recipes from the week's leftovers. ****** Peeled the tender baby-sized summer squash before slicing, boiled, & draining them. Do not mash. Sauteed the onion & peppers in butter & added to squash in large bowl. Mixed in 1 egg, 3/4c shred Monterrey jack cheese (not cheddar); 1c leftover store-bought Whole Foods deli Persian-style sweet rice (prepared rustic brown rice w/ nutmeg, nuts, green onions & cilantro). Mixed in 1/2c sour cream (no mayo) and chopped pecans. Baked uncovered in PAM sprayed baking dish 35 min, then added a sprinkle of Italian style breadcrumbs and cooked another 5 minutes. My family can't stop raving about it. Makes an ideal vegetarian meal or a hearty side dish to an entree.

Company Potatoes

Because this is what we had on hand, we used defrosted O'Brien-style potatoes, green onions instead of regular onions, half as much cream cheese, 1 can only of cr. mushroom soup, 1/2 cheese mixed into the potatoes, 1/2 cheese as topper. No Dill. No Milk. Cooked covered 35 min, then 15 min uncovered, then 5 min w/cheese on top to lightly brown. Tastes like a loaded baked potato. My family loved it along side a beef main dish.

Cousin Cosmo's Greek Chicken

My family just loved this recipe. As others suggested, we sliced open and stuffed the boneless chicken breasts, secured with toothpicks. To "sauce" in pan we added a little flour to thicken before we added spinach. Add 1 & 1/2 bag of baby spinach & chopped tomatoes the last 5-6 minutes so it retained it's bright color while it wilted down. Sprinkled a little feta cheese crumbles on top when we served it. ******** Served over couscous mixed in with 4oz can saute chopped canned mushrooms and sliced green onions. A+ recipe.

Egg Breakfast Pizza

We altered this quite a bit for Southwest flair, reduced serving size to 2 people. ************** We used two lightly toasted (in oven/ to crisp) 8" flour tortillas instead of pizza crust, & omit the soup & milk in recipe. Spread 1/4c can (or jarred) green chili over tortillas. Put 2 cooked scrambled eggs, with 1/2c of saute chopped red peppers & onions on top of tortillas. Added 4 slices of cooked microwave bacon coarsely chopped & topped with shredded Mexican style cheeses. Cooked directly on top oven rack under broiler until cheese is bubbly (watch that it doesn't burn!). This is a great late night snack also. Any topping broiled on a tortilla works great.

Pumpkin Chocolate Chip Muffins

I give it 5 stars, my daughter gives it 4 stars. She says they aren't sweet enough, but I prefer muffins with just a touch of sweet. I followed the recipe exactly as written except I used mini semi sweet chips.

Cuban Picadillo

My husband, 18-yr-old daughter and I just loved this. We incorporated a lot of the suggestions: added 1/4c rinsed capers, used 1c golden raisins, one 6oz can of tomato paste AND 3 tomatoes chopped; 1/3 c fresh cilantro; used only 1c sliced green olives. We served it with the Coconut Jasmine Rice another poster suggested (Yummy, A++ on that rice!). Recipe makes enough for 2nds tonight and lunches tomorrow. Thanks for sharing this excellent recipe.

Zucchini Tomato Pie

5 stars - we added 1/2 c shred Monterrey jack in addition to the Parmesan cheese; 4oz sliced can mushrooms. Red onion. Tossed in some dry spices: garlic powder and onion powder. Pouring the egg / milk mixture caused it to run over the top so I dumped the whole think in a bowl, mixed lightly and then poured back into the pie tin. Sprinkled with dry parsley & S&P. We are at high altitude and had to cook it an additional 7-8 minutes to cook the middle fully. *** not strong flavors, so it complimented entree well.

Wasabi Mayo Salmon

5 star with modifications: Uniformly rubbed wasabi paste on the raw salmon. Mixed 1tsp minced jar garlic & ginger in with mayo, added splash of soy sauce & 1tsp dry basil. Sprinkled plain dry bread crumbs on top of fish instead of potato chips. Last 3-5 minutes broiled. Served with zucchini & tomato pie (many recipes on this site).

Sour Cream Chicken Enchiladas

We live in New Mexico and like our enchiladas hot. I added 1/2 can green enchilada sauce to both the bottom of casserole & on the top of rolled enchilada. To ingredients I added 1 whole seeded & chopped jalapeno pepper; 4oz chopped green chili; 1T jar minced garlic; and 2tsp cumin seed powder. After baking 30 min I uncovered the casserole and added 2 cups total of shredded jalapeno flavored & colby/jack cheeses and returned dish to oven 5 minutes more until melted. Serve with sour cream, diced tomatoes & shred lettuce, and slices of ripe avocado. Note: leftovers tend to be spicier the next day.

Hashbrown Breakfast Bake

Being from New Mexico we add green chili to most everything. I added 1/2c HOT fresh cut up green chili to potato mixture (can use can or jar), 1 small jalapeno chili pepper (seeded & chopped fine), 1t red pepper flakes, 1/2t dry cumin, 1T jar garlic, 1/4c finely chopped yellow onions. After fully cooked, we garnished with chopped fresh cilantro leaves and green onions. My family's favorite Sunday breakfast.

Zucchini Soup II

Wow, I love this recipe! I MINCED the onions, celery and carrots, and DICED the zucchini. We prefer a chunky soup so I did not puree it. The wine in the recipe gives it depth and character, so don't skimp on the wine. I added 3/4c of leftover shredded baked chicken and my sour cream had chives in it, which tasted great. Sprinkled a little dry parsley on top of bowls for a pretty presentation and served with Panini sandwiches. This would be an excellent scallops or crab cream-base soup.

Buffalo Chicken Fingers

5* with modifications/added 2T FRANK's brand Louisiana sauce to the egg mixture and removed the cayenne pepper. It made it spicier. Served with Blue cheese salad dressing for dipping. Yummy!

Garlic Spinach Soup

I used dry ginger spice, added fresh sliced green onions and omitted the noodles. Served with a squeeze of lime and fresh cilantro on top. Gave it a Vietnamese spin.
