Stuffed Jalapeno Firecrackers

OK, rule of thumb, the smaller the Jalapeno, the hotter it is. Use gloves to seed the peppers, else you get the oils on your hands and hurt for some time. I cut strips of bacon in half before wrapping. I sprinkled onion and garlic powder and dried cilantro over the cream cheese before wrapping. Did this in a toaster over on broil.

Michelle's Coconut Chicken Curry

5 stars with these modifications--added to basic recipe: 2 brown potatoes, cubed;1/2 lb baby carrots sliced thin; 3/4c fresh snap peas; 1/4c Hot Madras Yellow Curry powder; 1T Turmeric; 1T red pepper flakes, and 2tsps hot chili pepper powder [we like our food spicy]. 2tsps dry ginger; 1tsp dry basil; 2Tbs brown sugar; 1tsp lemon juice; 1/4c fresh chopped cilantro; 2T jar minced garlic; 1 whole green pepper diced. Before serving over white rice we topped with coarsely chopped peanuts, thin sliced green onions, and raisins. OMG this is wonderful. I am on a curry high

Curried Chicken Soup with Chickpeas and Cauliflower

Hashbrown Breakfast Bake

Being from New Mexico we add green chili to most everything. I added 1/2c HOT fresh cut up green chili to potato mixture (can use can or jar), 1 small jalapeno chili pepper (seeded & chopped fine), 1t red pepper flakes, 1/2t dry cumin, 1T jar garlic, 1/4c finely chopped yellow onions. After fully cooked, we garnished with chopped fresh cilantro leaves and green onions. My family's favorite Sunday breakfast.

Egg Breakfast Pizza

We altered this quite a bit for Southwest flair, reduced serving size to 2 people. ************** We used two lightly toasted (in oven/ to crisp) 8" flour tortillas instead of pizza crust, & omit the soup & milk in recipe. Spread 1/4c can (or jarred) green chili over tortillas. Put 2 cooked scrambled eggs, with 1/2c of saute chopped red peppers & onions on top of tortillas. Added 4 slices of cooked microwave bacon coarsely chopped & topped with shredded Mexican style cheeses. Cooked directly on top oven rack under broiler until cheese is bubbly (watch that it doesn't burn!). This is a great late night snack also. Any topping broiled on a tortilla works great.

Wasabi Mayo Salmon

5 star with modifications: Uniformly rubbed wasabi paste on the raw salmon. Mixed 1tsp minced jar garlic & ginger in with mayo, added splash of soy sauce & 1tsp dry basil. Sprinkled plain dry bread crumbs on top of fish instead of potato chips. Last 3-5 minutes broiled. Served with zucchini & tomato pie (many recipes on this site).

Slow Cooker Teriyaki Pork Tenderloin

Rating is with these modifications: Added 2 tsps jar ginger. Two Green Jalapeno instead of red peppers. Added 1/8 tsp Asian Sriracha Hui Chili Sauce (use sparingly if you don't like spicy food). Doubled the teriyaki sauce in recipe. I used a smart Hamilton Beach slow cooker with probe set at 160 degrees on LOW [it turns itself to Warm setting when done]. Approx cook time was 2.5 hrs for slice-tender meat. Thickened sauce in pan w/flour on stove top. Served w/white rice w/almond slivers & parsley and steamed broccoli spears. Husband and I give it an A+.

Turkey Mushroom Tetrazzini

To the basic recipe I added 1/8c dry sherry, 1/4c of thinly sliced celery, 1 T lemon juice, 1 T chicken bullion and Salt/Pepper. Omitted the almonds because I didn't have any on hand. Pretty good recipe, my husband had two servings.

Campbell's Kitchen Turkey and Stuffing Casserole

I made this using 16oz frozen broccoli pieces (defrost / cooked in microwave), but in addition I also added 1/2c sliced steamed fresh carrots; & 1/2c each chopped yellow onion and celery saute in butter. Also added 1/3c dried cranberries & 1/2c almond slivers (for crunch!). Instead of adding milk, I used the water drained from the broccoli and 2 cans of cr. of mushroom soup. We made a casserole AND 4 smaller single-serving ramekin dishes for taking to work. My family really enjoys this.

Easy Minute Steaks

5 Stars with modification - Dredge meat in flour w/garlic pwdr, Salt&Pepper; added 1can cr. Mushroom soup & simmered covered 40 minutes on stove top.~~~~~~ My teenage daughter loved it served with homemade cheesy potatoes, steamed broccoli with lemon butter and crescent rolls.

Summer Squash Casserole with Nuts

A+ with modifications, truly not the same recipe though...:) On Sundays I toss together recipes from the week's leftovers. ****** Peeled the tender baby-sized summer squash before slicing, boiled, & draining them. Do not mash. Sauteed the onion & peppers in butter & added to squash in large bowl. Mixed in 1 egg, 3/4c shred Monterrey jack cheese (not cheddar); 1c leftover store-bought Whole Foods deli Persian-style sweet rice (prepared rustic brown rice w/ nutmeg, nuts, green onions & cilantro). Mixed in 1/2c sour cream (no mayo) and chopped pecans. Baked uncovered in PAM sprayed baking dish 35 min, then added a sprinkle of Italian style breadcrumbs and cooked another 5 minutes. My family can't stop raving about it. Makes an ideal vegetarian meal or a hearty side dish to an entree.

Baby Spinach Omelet

Mixed in chopped green onions and grated fresh Parmesan cheese. Yummy! Ladies, a great way to increase your Iron intake too. Make sure you eat with some Vit. C (e.g., OJ) for maximum iron absorption.

Chicken Jalfarezi

I cooked this in a 4 Quart slow cooker on low for 6-7 hrs. Did not need extra fluid. Used only two raw boneless chicken breasts cut up. Added 1/2c whole canned chickpeas, 1/4 c golden raisins, and doubled the spices. But, still needed a bit more kick, so next time I will add more spices with heat (e.g., HOT chili powder). We served over Couscous.

Cuban Picadillo

My husband, 18-yr-old daughter and I just loved this. We incorporated a lot of the suggestions: added 1/4c rinsed capers, used 1c golden raisins, one 6oz can of tomato paste AND 3 tomatoes chopped; 1/3 c fresh cilantro; used only 1c sliced green olives. We served it with the Coconut Jasmine Rice another poster suggested (Yummy, A++ on that rice!). Recipe makes enough for 2nds tonight and lunches tomorrow. Thanks for sharing this excellent recipe.

Sour Cream Chicken Enchiladas

We live in New Mexico and like our enchiladas hot. I added 1/2 can green enchilada sauce to both the bottom of casserole & on the top of rolled enchilada. To ingredients I added 1 whole seeded & chopped jalapeno pepper; 4oz chopped green chili; 1T jar minced garlic; and 2tsp cumin seed powder. After baking 30 min I uncovered the casserole and added 2 cups total of shredded jalapeno flavored & colby/jack cheeses and returned dish to oven 5 minutes more until melted. Serve with sour cream, diced tomatoes & shred lettuce, and slices of ripe avocado. Note: leftovers tend to be spicier the next day.

Fiesta Stuffed Peppers

5 star with modifications: on stove, cooked & drained beef. To beef, added onion and salsa, 1/2 c instant white rice and cooked until boil, cover and sit 5 min. To this I added a leftover mixture of stir fried chopped bell peppers, zucchini jalapeno peppers, onions, canned corn, and minced garlic. Added dry spices: cilantro, cumin, red pepper flakes. Stuffed into prepared green peppers, added ~1T salsa on top of each stuffed pepper. Cooked in SLOW COOKER 4 hrs on low. Topped with shred Mexican style cheese & thinly sliced green onions last half hour of cooking time. A+!

Angela's Oriental Chicken Noodle Soup

Doubled recipe and fed 3 adults. Altered recipe as follows: in 4c chicken broth, boiled thinly sliced baby carrots & 1 can drained sliced mushrooms for 3-5 min. Then added 2 thinly sliced green onions (including green parts), 2 pkg broken up Ramen Noodles, only 1 flavor pkt from the noodles & 2c fresh baby spinach. Cooked 3 minutes longer. If I had it on hand, I would have added chicken as well. Served alongside sandwiches.

Pumpkin Chocolate Chip Muffins

I give it 5 stars, my daughter gives it 4 stars. She says they aren't sweet enough, but I prefer muffins with just a touch of sweet. I followed the recipe exactly as written except I used mini semi sweet chips.

Banana Colada

Rating is with modifications - Added 1/2c fresh strawberries. Used 3 bananas, Coconut milk as directed, 4oz light color rum, 1/2tsp vanilla and omitted banana liqueur (didn't have any). Husband loves it. He's on his third glass.
