About this Cook
I grew up in a family of 14. My father really enjoyed cooking as a hobby. He would head to the kitchen at the end of a long day at work and create such wonderful meals. At 85 years old he still grows his own tomatoes and cooks up fresh spaghetti sauce every weekend.
My favorite things to cook
Love cooking breakfast. It forces me to really think outside the box.
My favorite family cooking traditions
A huge spread of varied appetizers and dips on Christmas Eve; Attending cooking classes with my adult daughters; Attending the Santa Fe NM "Souper Bowl" every year in support of the Food Depot; New tradition this year, attending the Santa Fe "Edible Art" tour where local artists are matched with local restaurants and you walk from gallery to gallery grazing and enjoying the art.
My cooking triumphs
Teaching my three daughter to enjoy cooking for themselves and others. Our favorite saying: "Learn to cook and you'll never starve."

Spinach Rice Casserole
5 stars, but added the following: 1/4 t each Oregeno, red pepper flakes, garlic & onion powder; dash of salt and pepper. 1/2 c each sauteed cubed zucchini & fresh sliced mushrooms; 3/4 c cooked chicken breast in cubes, I omit the water but added 1 can cream of chicken soup. We used rustic rice mix (not long grain, but took same amount of time to cook). Added 1/2 c each of shredded colby/Jack and sharp cheddar. 1/4 c shred Parmesan cheese. Mixed all together in large bowl, pored into casserole and baked with Parmesan sprinkled on top for about 15 minutes until warm. Yummy!!!!

Chicken Breasts with Balsamic Vinegar and Garlic
Husband gives it an A+. Served over white rice. Used 2 cans of mushrooms instead of fresh.

Turkey Mushroom Tetrazzini
To the basic recipe I added 1/8c dry sherry, 1/4c of thinly sliced celery, 1 T lemon juice, 1 T chicken bullion and Salt/Pepper. Omitted the almonds because I didn't have any on hand. Pretty good recipe, my husband had two servings.
