Southern Grits Casserole
My family LOVED this recipe, and a few who didn't think they liked grits were its biggest fans :) I did make a few alterations; I really seasoned the water the grits were cooked in (salt & pepper) and added a small can of diced green chilies when I stirred the butter and cheese in. I used bacon instead of sausage, but the bacon gets soft and is not as appealing, so I would definitely use sausage next time. When scrambling the eggs, I would leave them chunky so you would have discernible bites of egg in the casserole. I also added a can of diced green chilies to the egg mixture, and used pepper jack cheese instead of cheddar. The dish was medium-level spicy, but everyone loved it. It doesn't re-heat (say in the microwave) with the same consistency because grits keep absorbing available moisture, so you need to cook and stir it in a pot on the stove top with a little added milk or butter to make it creamy again. VERY yummy, love love love it!

Sausage Casserole
Loved this recipe overall, but made a few changes. I used O'Brien potatoes so didn't need to add the recommended amount of shredded onion. Like another reviewer, I baked the potato layer for 30 minutes and refrigerated overnight, then finished the dish the next morning. I also salted and peppered the egg mixture, and crumbled 1 pound of cooked bacon on top for additional flavor (this made it very pretty as well.) When I make it again, I will double the amount of sausage, as it seemed to have more potatoes than it needed, and although this might make the potato layer look a bit scant, I don't believe that would be a problem at all. This was very popular at my recent family gathering.

Country House Bed and Breakfast Casserole
I made this for a big family gathering this weekend, and it was very popular even among the picky eaters. I bought seasoned focaccia bread with jalapeno's at the grocery and diced and dried it to make the croutons. It really added flavor to the dish. Also, I would recommend using much less butter, as the dish seemed too greasy (I think the cheese would probably melt out enough grease without the butter, since it goes on top of the croutons.) Also, I added a small can of diced green chilies to the egg mixture for a bit more flavor. I did not refrigerate overnight, just assembled and cooked it right away. Very good!
