Blackened Tuna
This was absolutely awesome. All of my family members loved, loved, loved it. To make it slightly lighterar, I skipped the butter and used spray oil inthe pan. Also, I let the tuna steaks marinade in fat free italian dressing instead of olive oil. WOW!

Pork Medallions with Balsamic Vinegar and Capers
This is a great meal with an awesome sauce. My family LOVED it! Yummmm!!

Chewy Chocolate Chip Oatmeal Cookies
These were great! I changed it around by using packets of instant oatmeal that nobody seemed interested in eating. I also chopped up granola bars that weren't eaten and added them instead of chocolate chips. YUMMY1
