Pumpkin Protein Cookies

This is the best protein cookie recipe I've tried! The texture is moist and the flavor is great. Only change I made was to remove the soy flour and add two scoops of protein powder instead. For 85 cals and 6 g of protein per cookie! Thanks Ronna!!! Even my kids love 'em.

Broccoli Soup

I was worried after reading other reviews of this recipe but gave it a try anyhow because it looked so easy. It turned out terrific!! It was a little bland but I just added some chopped fresh sage and a little season salt and it turned out great! And you can't beat it for healthy. For my husband I stirred a 1/4 c of chopped proscuitto (you could use ham too) into his and he loved it. I also doubled the potato as per previous reviews here and I loved the thick texture. I will definitely put this in our monthly rotation - thanks Lon!

Pumpkin, Sweet Potato, and Leek Soup

I'm a lazy cook :) I subbed a large can of pumpkin for the sugar pumpkin and a can of vacuum-packed sweet potatoes for the fresh variety. I used a tsp of pumpkin pie spice for the spices and used 1/2 c of evaporated milk for the cream. Although I'm sure fresh is better, this soup turned out very tasty!! And for 140 calories and 6 grams of fat per serving, was quite healthy too. Will definitely make again.

Stir-Fried Shrimp with Snow Peas and Ginger

This had a great mild flavor - I added a bit more ginger and garlic as well as adding a few water chestnuts and bamboo with the peas. My only comment would be that it only makes enough sauce to barely season the shrimp and veggies - if you like it really saucy or want to put it over rice, double the sauce.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Fantastic!! I have long searched for a tasty 100% whole wheat banana bread recipe and this is it. I made 1/2 the batch with mixed froz. berries and those were definitely very very moist (as pointed out by other reviewers) but I left out the berries in the other 1/2 and they had a lighter texture. I preferred the denser berry muffins, my kids liked the plain. Everyone wins:) Thanks Mimi!

Moroccan Chicken and Whole Grain Couscous

The flavor is fantastic! I'm vegan so I left out the chicken and used vegetable broth but those were the only changes I made. It was very tangy and flavorful and was perfect over the couscous. Delicious! Thanks!!

Crustless Quiche Lori-iane

The cumin is very overpowering. I reduced the paprika from 1 TBSP to 1 tsp but even then the flavor seemed off. While I liked the fact that it was crustless and had a good texture, nobody in my family said they'd eat it again.

Chicken Katsu

Very easy recipe. I baked mine in the oven at 400 degrees for about 20 minutes to save on fat. They came out crispy on the outside and juicy on the inside. The real hit of the meal was the sweet and sour sauce recipe posted by the top commenter!!

Spiced Butternut Squash Muffins

I'm lazy and just used a can of pureed butternut squash so maybe that made a difference but these muffins turned out PERFECT. I even subbed whole wheat flour for the white flour and the texture was still great. Love these! Thank you!
