Cheese Dip with Beer

We all loved this! I added a lot more beer than the recipe calls for (I think it was about a bottle and a half that I used) to get the consistency that I wanted. I'll definitely make this again!

Greek Lentil Soup (Fakes)

Easy, hearty, and budget friendly soup that tastes good too! The only change I made was to use less olive oil than the 1/4c and I also left out the rosemary. I used a few splashes of red wine vinegar at the end of cooking.

Hungarian Mushroom Soup

The only changes I made were to only use 2T of butter and to use vegetable broth instead of chicken broth so it was vegetarian. Also had everyone put a dollip of sour cream on top of their individual soup instead of mixing it in because I had fat free sour cream on hand and was afraid of it breaking up in the soup. We really liked it and will make it again.

Lentil Soup with Lemon

This was a good soup. I didn't think it was amazing or anything but it was good. I used 2 cans vegetable broth instead of a carton of broth and it was soupy enough for us. I think next time I'd add a little bit more spice to it and maybe even some more lentils so that it is a little bit thicker (personal preference).

Sun-Dried Tomato Basil Orzo

Cut the recipe in half and followed the adjusted ingredients amounts. It has a delicate flavor when made as written. Next time I'll follow some of the other reviewers advice and add more of the basil/tomato mixture and maybe add some feta cheese and/or red wine vinegar and kalamata olives.

Low-Fat Blueberry Bran Muffins

I made them per the recipe and thought they were ok. They stick somewhat to the paper liners so next time I'll just spray the muffin pan and skip the liners. If the blueberries you have aren't sweet you may want to consider adding additional sugar or another sweet fruit to the mix as there isn't much sweetness in the recipe itself and it needs some kind of sweetener. The blueberries I used were somewhat tart and left the muffins tasting the same.

Tomato-Mint Quinoa Salad

The sesame oil threw off the flavor for me especially when combined with cumin. They just didn't work well together. Next time I'll change the dressing and maybe use a small red onion (1/4c or so) since the medium onion was such a strong flavor in the salad.

Grilled Portobello with Basil Mayonnaise Sandwich

Garlic Ginger Tofu

Plain. Really, really plain. In order to not have to throw it out I made a lot of changes to the recipe. I added soy sauce, more ginger, more garlic, some sambal olek, some frozen veggies (peas & carrots is what I had on hand), some chopped up water chestnuts and then some dashes of sesame oil at the end of cooking. It wasn't amazing with my changes but at least we could eat it.
