DON'T add the almond extract--it RUINS it!! Without it it's five stars!

Chicken Julienne

I've made this twice now. Chicken gets very tender and there's a nice subtle taste of lime. Cream makes it a very rich dish, however.

Sopapilla Cheesecake Pie

I made this for a Cinco de Mayo party and everyone raved over it and asked for the recipe. Some people said it was the best cheese cake they've ever had!

Four-Bean Medley

Reviewed: Oct. 22, 2008
I added 12 cut up hot dogs to the crock pot to make it more of a meal. I also used Hormel crumbled bacon to avoid the bacon grease mess. I cooked the onions in a bit of EVOO and then added the other listed ingredients. When this is first cooking in the crock pot, the vinegar smell(I used apple cider) is overwhelming, but cooks of after a while. Will be making this one again!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Oct. 21, 2008
LEFTOVER ALERT: I cut the meat into cubes, placed it in a 9x13 pan, poured 2 cups of cooked elbow noodles over meat, then topped with slices of American cheese, and poured the left over gravy over all. Baked at 350 until cheese melted. Better than the original meal!

Ono Butter Mochi

Reviewed: Jul. 17, 2008
Very Good! I used 2 cups of coconut milk and 1 cup whole milk, and added a bit more coconut. NOTE: Since rice flour contains no gluten, this recipe won't rise like a normal cake. It stays dense and "sticky", so don't think you underbaked it. That's how it's supposed to be. Mine only needed 45 minutes in the over.

I made the cake according to package directions and then added the extra eggs, oil, and bananas. It was WONDERFULLY moist, and extra yummy with Peanut Butter Frosting from this site. Heaven!

Party Pinwheels

These were a hit, but as other reviewers suggested they go soggy after a day or two....even after extracting excess water from veggies....serve same day.

Butternut and Acorn Squash Soup

I used fat free chicken broth and low fat cream cheese......delish! Not overbearingly sweet but just a nice subtle sweetness. A rich, decadent soup, to be sure.

I make these the day before Thanksgiving. It cuts out a lot of prep time so the cook can enjoy the holiday, too.

So easy and so delicious. For easier cleanup, I line the pan with aluminum foil, and when the fudge hardens it peels right off.

Snickerdoodle Cake I

Reviewed: Oct. 15, 2007
This is a dense, moist delicious cake. The only thing different I did was double the sugar/cinnamon, sprinkled half of it over half the batter in the cake pan, poured the remaining batter, and then sprinkled the rest over the top of the batter. Yummy!

Special Lobster Bisque

Reviewed: Oct. 15, 2007
I was looking for a recipe similar to the bisque I had once in Mystic Seaport, CT. This wasn't it. Not very good for all the effort and it didn't get as thick as I'd have liked.
