This is excellent! I need to double it next time, my family devoured it. I always use smart balance in place of butter and it worked just fine. Otherwise made it exactly as written with our fresh blueberries.

Chicken Pot Pie IX

This is awesome!! And I love that it doesn't call for cream of chicken soup, I find that stuff nasty and won't cook with it. I made it as written and was concerned about the amt of celery seed but it gave it a wonderful flavor.

Luscious Lemon Cake

Excellent, so gooey and lemony. Looks nothing like the photo. Didn't have lemon cake mix, just yellow so used 1/4 cup of lemon juice in place of the water and it worked out perfect. My husband is in heaven with this cake right now.

Mom's Buttermilk Pancakes

I really like this recipe, simple, quick and beats box mix any day. I use whole wheat pastry flour instead and I double the recipe but not the butter, which I use smart balance for butter. I like the fact there isn't any sugar in the recipe since my kids like chocolate chip pancakes anyway.

Vegan Black Bean Soup

Wow this is really good. I have tried a few other recipes and they were watery and bland. This one is tasty, thick and hearty. And easy as well, my 4 y/o had two bowls!

Easy Slow Cooker Meatballs

My family loved this. Did follows others suggestions using some parmesan in place of bread crumbs, used whole wheat bread crumbs. Also added oregano and salt/pepper to meatballs and used 28 ounce crushed tomatoes with 1 can 26 ounce traditional tomato sauce and used basil, oregano, and little splash triple sec (once suggested by a local italian restaurant owner in place of sugar). I also browned some sausage for my 8 y/o and added them and they all loved it, it really was such a great tasting dinner.

Asian Roll Lettuce Wrap

This is so yummy. I have 4 kids under 7 and I sat there in amazement as they inhaled it. I did make chicken strips as well marinating them in the same mix that is added to the turkey, they were tasty. the kids loved the meatballs though. I did boston lettuce and used red peppers, carrots, and bean sprouts. I also did rice noodle instead of rice. Wasn't too crazy about the dipping sauce, luckily had some peanut sauce insead.

Quinoa and Black Beans

This dish is excellent. I only had 3/4 cup of quinoa in the house and used 1 can of black beans. I seriously couldn't stop eating it. Then once my DH got hold of it, it was gone. I need to get some black beans, I am dying to make it again, so good.

Carrot Cake III

This is an awesome carrot cake. The first time I made it this week I didn't have any applesauce in the house so I used a cup of the oil and it was plenty, there isn't any need for that amount of oil. I didn't use nuts only because I just don't like nuts mixed in food. I did follow the suggestion of 1/2 brown sugar and added a touch more cinnamon, yummy, my family ate the entire cake in two days and bugged me to make it again. I did it this time with applesauce and my picky DH didn't even notice. Also the first time the centers dropped, I used 2 9", this time I beat it less and I think without the oil helped, it came out beautiful the second time. This is a keeper and my 3 y/o asked if I can make it for his birthday cake in a few weeks, how darn cute is that. Thank you for the great recipe!

Special Buttercream Frosting

Wow this is awesome!! This was my first attempt at making and decorating my kids birthday cake and this frosting not only tasted amazing, it was so easy to work with in regards to decorating with the wilton tips. I did use all butter, otherwise kept the recipe the same. I could only make 3/4 of the batch at once in my kitchenaid, it does make alot but it sure goes once the family gets a taste. I did find letting it mix for like 5 minutes made it much fluffier and even better.

Baked Brie in Puff Pastry

This is excellent but you definitely need to add a preserve of some kind, I did seedless raspberry without almonds because I just don't like nuts in my food. I also made sure the edges were sealed and it didn't leak and did the egg wash over the top with some cut out shapes, it looked and tasted marvelous!

Best Big, Fat, Chewy Chocolate Chip Cookie

My husband is going crazy over these cookies, they are awesome. He wants to put ice cream between two of them, he keeps saying how perfect they are. I feel they are a little harder than I hoped but I did cook them for 20 minutes, so next time I will cook them less. But the taste is perfect for me and right out of the oven they are to die for.

Alison's Slow Cooker Vegetable Beef Soup

This soup is super easy. I don't know what the 10 cubes of boullion is all about, I only had three on hand so used them and increased the water to 4 cups, I did add a little salt at the end but this soup is awesome. I also needed to cook it longer because surprisingly the potatoes were still hard. I made some fresh bread and meal was ready. And it tastes better after a day or two, yum!

Baked French Fries I

These were very good. My husband asked me in disbelief, did you make these from scratch. He is tough to please and he thought they were awesome. I cut them smaller just because that is the way I like them and I added some salt and pepper otherwise followed the recipe, will be making them again...soon.

Apple Pecan Cobbler

This was awesome. I did not use pecans because we just don't like nuts in our food. Also did cut back on the sugar in the mixture to 3/4 cup and will try cutting back even farther as well and did use some brown sugar and white sugar combination. I used four apples as well. My husband went crazy over this and so did I. It was even better the next day wiht coffee, yum!
