This is an awesome carrot cake. The first time I made it this week I didn't have any applesauce in the house so I used a cup of the oil and it was plenty, there isn't any need for that amount of oil. I didn't use nuts only because I just don't like nuts mixed in food. I did follow the suggestion of 1/2 brown sugar and added a touch more cinnamon, yummy, my family ate the entire cake in two days and bugged me to make it again. I did it this time with applesauce and my picky DH didn't even notice. Also the first time the centers dropped, I used 2 9", this time I beat it less and I think without the oil helped, it came out beautiful the second time. This is a keeper and my 3 y/o asked if I can make it for his birthday cake in a few weeks, how darn cute is that. Thank you for the great recipe!
