Quiche Lorraine I

Made this quiche for a baby shower I was hosting. The Mama-to-Be just emailed me asking for the recipe because she just loved it so much!!! I followed the recipe exactly and had no problems. I would wait for it to cool completely before slicing though.

Pork Chops with Raspberry Sauce

We intended to make this with pork but ended up having to make it with chicken (our pork chops didn't look so good when removed from the packaging). I'm sure this would be great with pork, but it was also GREAT with chicken. Very flavorful, perfect blend of spices. We made exactly as is (except for the pork), and we wouldn't change a thing.

Ragu® Upside-Down Deep Dish Pizza

Great, versatile recipe! I followed the recipe exactly as written and opted to use the spinach. I had a couple questions as I went along, which I will answer for others here. First, I couldn't find a 10 oz. can of refrigerated pizza crust, only a 13 oz. can (or 13.25?) and an 11 oz. I went with the 13 oz can and it worked very well. I had a little dough remaining on the edges, which was more from me kneading it out larger than necessary. I trimmed the excess off but could just as easily worked it into the edge, it is after all intended to be a pizza crust (thick and bubbly) and not a pie crust. I was also unsure if my deep dish pie plate was considered a 2 qt dish. I just went with it and it worked out perfectly. I also thought after adding the tomato sauce that the meat mixture would be too runny. While it certainly is more "liquidy" than the sauce and meat you'd find on a normal pizza, it worked out well and I think I will just continue to use the 26 oz of sauce as called for. And just a note, it's cool and all to think of this as an "upside down" pizza, but you must eat this with a fork, so it feels more like a pizza casserole of a sort. Either way, it's delicious. Enjoy!

Curry-Strawberry Chicken

Yum, yum, yum, and yum!! My whole family enjoyed this recipe. Since it hadn't been reviewed yet, I made the recipe exactly as written, and we wouldn't change a thing! And it's so quick and easy to make. We served the chicken alongside rice and broccoli, then ended up mixing it all together, drizzled with the sauce, and it was EXCELLENT!! I can't wait to make this one again.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Fantastic! Using whole wheat flour versus whole wheat pastry flour worked fine. These pancakes cooked up so nicely, were soft, and just plain yummy. Must try!

Lime-Berry Chicken Salad

Exceptional!! Salads aren't normally a mainstay for dinner in our family - but I believe our customs are about to change based on the "delicious-ness" of this salad. All the components of the salad worked in such perfect harmony. I've not used raw sugar snap peas before in my meals, so was skeptical, but they were such a perfect complement to the other salad ingredients. I could literally go on and on about how delicious this was - but I won't. :) Here are some notes: (1) I did not have limeade concentrate and would not buy any just to use 3T, so I replaced the concentrate with 2 1/2 Tbsp lime juice, 1/2 Tbsp lemon juice, and 1 1/2 tsp sugar; (2)I halved the dressing recipe. The conversion turned out well and the amount more than plenty for our needs. I did not have dried minced onion and prefer the taste of fresh onion, so I used approximately 1/4 cup finely chopped onion in the dressing; (3) I used canola oil instead of vegetable oil; and (4) I mistakenly added all the dressing ingredients in the blender at once, rather than slowly adding in the oil and stirring in the poppy seeds at the end. I don't know if following the instructions would have made a difference or not, but it saved me time and was absolutely wonderful! Enjoy!

Carrot Cake III

You must try this recipe!! Absolutely delicious, so moist, so flavorful - everyone, including those who say they don't like carrot cake, love this cake! Also, the best cream cheese frosting recipe I've ever made. A definite keeper! The only substitution I made was replacing 1/4 cup of the oil (used canola oil) with applesauce.

Whole Grain Waffles

Just because they're good for you doesn't mean they don't taste awesome! This recipe is not just for health nuts, so don't pass it by when you see wheat germ, flax seed, whole wheat flour, etc. I used whole wheat flour rather than pastry flour and they turned out great. While I normally only like crispy waffles, these softer waffles absorbed the butter and syrup perfectly (okay, so I found a way to make it less healthy). Yum, yum!

Black Magic Cake

This cake is incredibly moist and delicious!!! I will NEVER go with another chocolate cake recipe. The second time I made the recipe I added about 1/8 - 1/4 cup more cocoa to intensify the chocolate flavor (the chocolate flavor was a bit too subtle the first time we tried it, perhaps competing with the coffee flavor). Yum, yum, yum.

Herb Roasted Pork

Wonderful roasted pork recipe! I did use 3 1/2 lbs rather than 5 lbs without modifying the recipe (except to bake it for only about 1 1/2 hours), and the rub and glaze were just enough to go around. We will definitely make this recipe again and again!

Lower Fat Banana Bread I

I followed another's suggestions and made the following changes: substituted 1/3 cup brown sugar for 1/3 cup of the white sugar; substituted applesauce for the margarine; substituted skim milk for the water; substituted 2/3 cup wheat flour for 2/3 cup of the all-purpose flour; added 1 tsp vanilla; and added 1 tsp cinnamon. This is truly the best banana bread I've ever had and it's so much better for you!

Southwestern Corn and Walnut Dip

Not too spicy, just right. Might add more walnuts next time, the flavor wasn't quite prominent enough for me. And I've tried frozen corn but will probably go with the canned corn next time as recommended. Lots of people ask me for this recipe at parties. Thanks for such a yummy recipe!!

Macaroni and Cheese V

There are lots of mac & cheese recipes on this site. I chose this one because of its lower sodium content, comparatively, because it's easy to make, and it's not "overdone" with extra ingredients (like bacon, etc). My toddler loves this recipe! So do we!

Cowboy Mashed Potatoes

Excellent!!!!!!!!! May need to mash the mixture in batches, but otherwise, very easy to prepare. For those health-conscious individuals out there, I'm sure these potatoes would be delicious without or with less butter. For those looking for some zing to their potatoes, you might want to aadd more jalapeno--we couldn't really taste that flavor among the many other wonderful flavors. Great recipe!!!
