Bean and Bacon Salad

Would give this 6 *'s if I could. Very fresh. Lots of chopping, but worth it. I'm not very good at measuring "cups" of vegetables--for this recipe I used 1 head of cabbage, 1 small bunch of celery, and 1/2 an onion. We're not big fans of raw onion, so reserved a little bit of bacon grease to cook the onion prior to combining with other ingredients (after draining well). This recipe is a great way to deliciously add cabbage to your diet!!

Almond Macaroons II

Don't know what I did, but these turned out horribly! Besides the texture, these tasted like dish soap (which I did not mistakenly add, LOL). Good luck to others.

Chicken with Lime Butter

Delicious. Light lime flavor. Dill adds perfect finish. Serves well as leftovers. Rather than fry chicken in vegetable oil, we grilled the chicken on our Foreman grill, and then coated the skillet with a 1/2 tsp oil before making the sauce.

Fresh Broccoli Salad

Wow! This is delicious! We cooked up the onion slightly before combining with the rest of the ingredients, added walnuts instead of almonds, and reduced mayo to 3/4 cup. Next time we will try red grapes in place of raisins (I'm not a big fan of the raisin).

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Flavor seemed to be missing something, not sure what. Will try once more, this time using tortellini rather than ravioli, and perhaps play with a few extra spices.

Angel Hair Pasta with Garlic Shrimp and Broccoli

Delicious. Broccoli added perfect complement to shrimp. Increased pesto to 2 Tbsp and milk to 1 2/3 cups.

Chicken Tacos

Okay, but not as tasty as you'd think, given the ingredients. Would be easier just to grill the chicken breasts without all the extra fuss--you'd achieve pretty much the same flavor with less fat.

Sweet Maple Pork Chops

The breading of oats was a very nice change of pace, great texture. However, the maple flavor was a bit too strong for my husband's and my liking. My husband prepared this dish and felt it was too much effort for the taste.

Angel Food Cake III

Moist, not excessively sticky like the pre-made angel food cakes you buy in the store. Very easy to make, turned out perfectly, and had a very nice "cakey" taste to it, I guess from the last step of adding the cake flour and sugar. Angel food cake is not one of my favorite cakes, but this recipe definitely pushed it up my list of favored desserts.

Homemade Chicken A La King

Very fresh tasting. Used 2 chicken breasts to equal the 2 cups diced chicken (I never like trying to convert cups of chicken--number of breasts is always easier). Also used frozen peas instead of canned for added nutritional value. I would suggest serving this over rice or would be perfect over a puff pastry or as the filling of pot pie.

Zucchini Herb Casserole

Yum, yum!! This did not make 6 servings, rather it made approximately 3 servings. I used instant brown rice and reduced the cheese by half. Absolutely delicious! This is a keeper.
