Sweet Maple Pork Chops

The breading of oats was a very nice change of pace, great texture. However, the maple flavor was a bit too strong for my husband's and my liking. My husband prepared this dish and felt it was too much effort for the taste.

Angel Food Cake III

Moist, not excessively sticky like the pre-made angel food cakes you buy in the store. Very easy to make, turned out perfectly, and had a very nice "cakey" taste to it, I guess from the last step of adding the cake flour and sugar. Angel food cake is not one of my favorite cakes, but this recipe definitely pushed it up my list of favored desserts.

Pecan Rice

Homemade Chicken A La King

Very fresh tasting. Used 2 chicken breasts to equal the 2 cups diced chicken (I never like trying to convert cups of chicken--number of breasts is always easier). Also used frozen peas instead of canned for added nutritional value. I would suggest serving this over rice or would be perfect over a puff pastry or as the filling of pot pie.

Zucchini Herb Casserole

Yum, yum!! This did not make 6 servings, rather it made approximately 3 servings. I used instant brown rice and reduced the cheese by half. Absolutely delicious! This is a keeper.

Delicious Black Bean Burritos

Very easy to make. I did not have fresh or dry cilantro on hand--this flavor would have completed the dish, but it was still good without. Lime might also be a nice flavor to add.

Butternut Squash Soup II

Very balanced soup--flavors do not compete. Smooth texture. Delicious! Was going to try another Butternut Squash Soup recipe sometime to compare, but after tasting this one, and noticing the fat content in other recipes, why mess up a good thing? This is great!

Not out-of-this-world, but will make again at some point. Easy to make. I did not "jazz it up" as suggested in the recipe's intro, but will next time to add a bit of flavor and varying texture.

Christian's Crazy Sherpa Potatoes

Absolutely delicious! I "doubled" the recipe and allowed veges to cook for 25 minutes rather than 15 (veges were still fresh, crisp but tender). I recommend cutting all veges to a uniform size. I always find measuring certain vegetables by cup measurements is difficult. For those of you who can sympathize, I added the following measurements: 3 Tbsp butter, 2 cloves garlic, 1 large potato, 1/2 cup frozen peas, 1/2 pound broccoli, 4 carrots, 3 zucchini, 1 green pepper, 1/2 cup-3/4 cup shredded cheddar cheese. Following the recipe in this way, provides approximately 4 servings. DELICIOUS!!

Apple Banana Smoothie

Okay, but won't be making again. I froze the banana with the peel still on--perhaps peeling and then freezing is better, considering how difficult it is to get the peel off (should I have known that??). Mixing 8 oz of milk with 1 1/2 bananas of medium ripeness is better and easier to make. Bananas need not be frozen.

Rhubarb Muffins

Excellent muffins! My husband and I had never had rhubarb, but we highly recommend these muffins. I don't even enjoy baked fruit foods, but this recipe is a keeper. Thanks for such a great recipe!

Gobble Up Granola Snacks

This was a good granola recipe, but I will continue to search for just the right one. These granola bars did not store well and tended to break apart and stick together rather easily. I used the specified amount of peanut butter, and although I love peanut butter, the flavor was a bit strong and did not taste as healthy as I would have liked. I still recommend others try these, just not for me.

Texas Chicken Quesadillas

What's not to absolutely love about this recipe--yum, yum!!!! We cooked our chicken on the Foreman Grill to reduce fat. Be very careful not to cook tortillas too long b/c they will get very, very crispy.
