Russell's Fish Stew

This was very good! I didn't have shrimp in my freezer so I used clams, scallops and fish and it was still great. Next time will definitely add the shrimp.

Simple Whole Roasted Chicken

Very tasty!!! However next time I will cut way back on the amount of salt it calls for. It was a too salty for my taste and my hands swelled from it. But otherwise nice flavor from the interesting combination of seasonings.

Tim's Lamb Stew

Very good! Even my husband liked it and he is not a fan of lamb (or goat). I used cubed goat shoulder and increased the liquid quite a bit by adding 4 cups of water to the beef broth. I also added chopped celery, rosemary, and oregano. Then simmered it for several hours on low. It was very good!

Lamb Shank Braised in White Wine with Rosemary

This was excellent! I had some goat shanks in the freezer so I used them instead of lamb. I browned them with the onions and garlic as directed but then transferred it to my crock pot. Added the rest of the ingredients and let it slow cook for about 4-5 hours. I added several cups of wine so it wouldn't dry out during cooking. It was heavenly! Next time I will add some small potatoes and baby carrots to the pot for an all in one meal.

Chicken Quinoa

Creamy Zucchini Hummus

Very nice flavor. I did add a couple of items. Some green bell peppers and a jalapeño pepper, extra curry and garlic and a can of garbanzo beans to thicken a bit more.
